Crispy Noodle Squash Pancake: Perfect for a Rainy Day!
After enjoying noodle squash in another dish, I used the leftovers to make this delicious pancake. It has a wonderfully crisp texture thanks to the noodle squash. This noodle squash pancake is a delightful treat, especially on a rainy day, served sizzling hot off the pan.
Main Ingredients
- 3 potatoes
- 1/2 cup noodle squash (cooked, separated strands)
- 1 Korean chili pepper (cheongyang)
- 1/2 onion
- A little stem of water spinach (or substitute with chives/scallions)
Batter Seasoning
- 2 Tbsp buckwheat flour
- 1 egg (optional, for a softer texture)

Cooking Instructions
Step 1
First, peel the potatoes and cut them into manageable pieces. Place them in a blender and blend until smooth. To the puréed potatoes, add finely chopped Korean chili pepper, finely chopped onion, and the chopped stem of water spinach (or chives). Mix well to create the base for your batter. Feel free to adjust the amount of vegetables to your preference.
Step 2
To the prepared batter, add 2 tablespoons of buckwheat flour. If you prefer a softer and richer flavor, add 1 egg and mix everything thoroughly. Finally, add the separated strands of cooked noodle squash and mix gently until all ingredients are well combined. Ensure the batter is not too watery; adjust consistency as needed by adding a little more flour if it’s too thin.
Step 3
Heat a generous amount of cooking oil in a skillet over medium-low heat. Ladle portions of the batter onto the hot pan to form small pancakes. Fry them until golden brown and crisp on both sides. While frying, you can add sliced garlic to the pan to infuse the pancakes with garlic aroma. For an extra touch, place some grilling cheese on top of the pancakes towards the end of cooking. Once the pancakes are beautifully browned, top them with the fried garlic and melted cheese.
