Noryangjin Style Potato Salad Pancake
Recreate the Nostalgic Noryangjin Street Food: Potato Salad Pancake!

When you think of delicious street food, certain areas often come to mind. For me, Noryangjin is the first place that pops up when I think of street snacks – it’s famous for its affordable and hearty offerings! Inspired by this, I’ve created a ‘Noryangjin Pancake’ featuring a delightful potato salad. This recipe brings the vibrant flavors of Noryangjin’s street food right to your kitchen. Imagine a fluffy pancake filled with a creamy, savory potato salad, a juicy sausage, and melted cheese – a combination that’s sure to be a hit with everyone! It’s a simple yet special meal or snack.
Pancake Batter Ingredients- 250g Hotcake mix (pancake mix)
- 1 cup milk (approx. 200ml)
- 1 large egg
Cooking Instructions
Step 1
First, let’s prepare the potato salad, the star of our pancake! Wash the potatoes thoroughly. Place them in a steamer or boiling water and cook until they are very tender, about 20-25 minutes. They should be easily pierced with a fork when done.

Step 2
Once cooked, carefully remove the hot potatoes and peel off the skins while they are still warm. Mashing them while warm prevents lumps and results in a smoother texture. Use a fork or a potato masher to mash them until smooth.

Step 3
Meanwhile, hard-boil one egg. Once cooked, cool it in cold water, then peel. Separate the yolk and the white. Finely chop the egg white and set aside. Add the egg yolk to the mashed potatoes and mash them together. This adds creaminess and richness to the potato salad.

Step 4
Combine the mashed potatoes and yolk. Season with salt to your preference. You can also add a pinch of pepper. Add a generous amount of mayonnaise and mix until everything is well combined and creamy.

Step 5
Add the finely diced carrot, onion, and chopped hard-boiled egg white to the potato mixture. Mix everything thoroughly. Your delicious potato salad is ready! Feel free to add other ingredients like finely chopped cucumber, ham, or corn kernels to suit your taste. Chilling it in the refrigerator will make it even more refreshing.

Step 6
Now, let’s make the pancake batter. In a bowl, combine 1 cup of milk (approx. 200ml) and 1 large egg. Whisk them together until well combined and no lumps remain. Ensure it’s smooth.

Step 7
Add the 250g of hotcake mix to the wet ingredients. Gently mix until just combined – avoid overmixing, as this can make the pancakes tough. A few small lumps in the batter are perfectly fine.

Step 8
Heat a non-stick pan over low heat. Add the scored sausage and cook until browned on all sides. This adds flavor and makes it look appealing inside the pancake. Remove the cooked sausage from the pan and set aside.

Step 9
Wipe the pan clean with a paper towel to remove any excess oil. Keep the heat on low. Ladle about one dipperful of pancake batter into the center of the pan. Crucially, maintain a very low heat from start to finish! High heat will burn the pancake quickly.

Step 10
As the batter cooks on low heat, you’ll see bubbles forming on the surface. When these bubbles start to pop, it’s time to flip.

Step 11
Once bubbles appear and pop, carefully flip the pancake with a spatula. Cook for about 5 seconds, then flip it back again. This ensures the pancake cooks through while remaining fluffy. (You can also skip the re-flip and proceed to the next step.)

Step 12
Place 1 slice of processed cheese directly onto the lightly cooked pancake.

Step 13
While the cheese begins to melt from the pan’s heat, spread about 1-2 tablespoons of your prepared potato salad over the cheese. Try not to spread it all the way to the edges.

Step 14
Place the cooked sausage on top of the potato salad. Now, carefully fold the pancake in half, like a crescent moon, using a spatula and your hand to enclose the sausage in the center. The pancake should fold easily.

Step 15
The folded pancake will hold its shape nicely without needing a mold. Cook briefly until the outside is lightly golden brown.

Step 16
Finally, drizzle mustard sauce and ketchup decoratively over your finished Noryangjin-style potato salad pancake. Enjoy this taste of nostalgic street food while it’s warm! Bon appétit!
