Nostalgic Bibim Dangmyeon: Busan Style
Golden Recipe by a Busan Native: Making Delicious Bibim Dangmyeon at Home
This recipe is for one serving. I made it missing the taste I used to have in Nampo-dong, Busan. It captures that nostalgic flavor.
Main Ingredients
- Flat glass noodles (about the size of a 500 won coin) 1 handful
- Carrot 1/4
- Spinach 1 handful
- Fish cake (Busan style) 1/2 sheet
- Pickled radish (danmuji) 2 slices
Seasoning Sauce (tablespoon measure)
- Gochujang (red chili paste) 1 Tbsp
- Gochugaru (red chili powder) 1 Tbsp
- Soy sauce 2 Tbsp
- Vinegar 1 Tbsp
- Minced garlic 1 Tbsp
- Sugar 1 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
- Gochujang (red chili paste) 1 Tbsp
- Gochugaru (red chili powder) 1 Tbsp
- Soy sauce 2 Tbsp
- Vinegar 1 Tbsp
- Minced garlic 1 Tbsp
- Sugar 1 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
Cooking Instructions
Step 1
First, prepare the vegetables, fish cake, and pickled radish for the bibim dangmyeon. Julienne the carrot, fish cake, and pickled radish thinly. Trim the roots of the spinach, wash it thoroughly, and pat it dry.
Step 2
Lightly coat a pan with a very small amount of oil and stir-fry the julienned carrots briefly. This will bring out the sweetness of the carrots and soften their texture slightly. Be careful not to overcook them.
Step 3
Similarly, lightly stir-fry the fish cake in a pan with a bit of oil. This enhances the fish cake’s flavor and gives it a pleasant chewy texture.
Step 4
Blanch the thoroughly washed spinach in boiling water for about 1 minute. As soon as the spinach wilts, immediately rinse it in cold water to retain its crispness.
Step 5
All the preparation is complete! Now it’s time to make the delicious seasoning sauce.

In a bowl, combine all the seasoning sauce ingredients: 1 Tbsp Gochujang, 1 Tbsp Gochugaru, 1 Tbsp Sugar, 2 Tbsp Soy Sauce, 1 Tbsp Minced Garlic, and 1 Tbsp Vinegar. Mix well to create the sauce.
Step 7
Soak the glass noodles in cold water beforehand until fully softened. This step ensures the noodles are chewy and absorb the sauce beautifully.
Step 8
Cook the soaked glass noodles in boiling water for about 4 minutes. If you haven’t pre-soaked them, boil them for approximately 6 to 6.5 minutes. Cook them until they are tender but not mushy.
Step 9
Drain the cooked glass noodles and rinse them under cold running water. This prevents them from sticking together and makes them delightfully bouncy. Ensure you drain them thoroughly.
Step 10
Combine the cooked glass noodles with the prepared vegetables, fish cake, and pickled radish. Add the seasoning sauce and mix everything together thoroughly for a delicious Bibim Dangmyeon. Sprinkle with toasted sesame seeds.
