Stir-fried Kimchi Ingredients

  • 1 head of well-fermented napa kimchi

Stir-fried Kimchi Seasoning

  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • 0.5 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp oligo syrup (or corn syrup)
  • A drizzle of perilla oil (generous amount)
  • Pinch of black pepper
  • Pinch of sesame seeds

Cooking Instructions

Step 1

First, prepare all the ingredients needed for the stir-fried kimchi and the kimbap. Lightly shake off the filling from the kimchi, then finely chop the kimchi into bite-sized pieces. If your kimchi is very salty, you can rinse it lightly with water before chopping.

Step 1

Step 2

Heat a pan and add a generous amount of perilla oil. Add the chopped kimchi and stir-fry over medium-low heat until the kimchi softens. The nutty aroma of the perilla oil will blend beautifully with the kimchi, enhancing its flavor.

Step 2

Step 3

Once the kimchi is sufficiently stir-fried, add 1 Tbsp of brown sugar, 1 Tbsp of soy sauce, 0.5 Tbsp of gochujang, and 2 Tbsp of oligo syrup. Mixing these seasonings evenly is key to developing a rich, balanced flavor.

Step 3

Step 4

Stir well to combine the seasonings with the kimchi. Continue to cook over medium heat for about 5 to 8 minutes, or until the liquid has evaporated and the flavors have melded into the kimchi. The goal is to reduce the moisture significantly, allowing the seasoning to coat the kimchi.

Step 4

Step 5

When the kimchi is no longer watery and has a glossy, stir-fried appearance, add a pinch of black pepper and sesame seeds, and mix quickly. This completes your incredibly addictive stir-fried kimchi, a perfect side dish for rice! It’s also delicious served hot over a bowl of steamed rice.

Step 5

Step 6

Now, let’s assemble the Kimchi Kimbap. Prepare the fillings using the homemade stir-fried kimchi and any other ingredients you have on hand in your refrigerator (e.g., egg omelet strips, stir-fried beef, pickled radish, spinach).

Step 6

Step 7

Lay a sheet of seaweed on a bamboo rolling mat. Spread a thin, even layer of cooked rice over the seaweed. Place a lettuce leaf on top of the rice, followed by a generous amount of the stir-fried kimchi. Add your other prepared fillings (like seasoned stir-fried beef and egg strips). Be careful not to overfill, as this can cause the kimbap to break when rolling.

Step 7

Step 8

Gently roll the kimbap starting from the edge closest to you, tucking in the fillings as you go. Use the bamboo mat to help shape and tighten the roll. To ensure the kimbap stays sealed, you can lightly moisten the edge of the seaweed with water before finishing the roll.

Step 8

Step 9

Brush the finished kimbap roll with a little sesame oil for a glossy finish. Slice it into bite-sized pieces and enjoy! Experience the delightful combination of spicy, sweet, and savory flavors from the stir-fried kimchi and the other fillings in this unique Kimchi Kimbap.
