Nostalgic Homemade Potato Salad

I missed the potato salad my mom used to make for me when I was little and disliked vegetables. Store-bought potato salads often have a distinctive vegetable aroma or contain cucumbers, which I couldn’t eat. Inspired by those old memories, I decided to create a recipe that evokes that familiar taste. It’s incredibly simple, perfect for anyone living alone!

Main Ingredients

  • 2 medium potatoes
  • 1/6 small onion
  • 1/4 can Spam
  • 1 large egg

Seasoning & Others

  • 1/2 tsp salt (for boiling water)
  • 2-3 Tbsp mayonnaise (adjust to taste)

Cooking Instructions

First, bring a pot of water to a boil. Once boiling, add 1/2 tsp of salt and carefully place the egg in the water. Boil for 12-13 minutes until it’s hard-boiled. Ensuring the egg is fully cooked will make it easier to mash later.

While the egg is boiling, peel the potatoes. Once peeled, cut them into about 6 large pieces. This increases the surface area, allowing them to cook faster. When the water is boiling, add the cut potatoes and cook until a fork can easily pierce them. Once tender, drain the water.

Immediately transfer the boiled egg to cold water to cool it down quickly, then peel it. Rinse the potatoes under cold water to cool them, and gently scrape off any remaining skin. Place the cooled potatoes and peeled egg into a large bowl. Using a fork or a potato masher, mash them until smooth. Aim for a lump-free consistency.

Dice the Spam into small cubes, about 0.5 cm in size. Heat a frying pan over low to medium heat. Add the diced Spam without oil and cook until golden brown and slightly crispy, being careful not to burn it. Lightly frying the Spam enhances its flavor.

Finely mince the onion. If you prefer less onion flavor or a milder taste, use about 1/8 of the onion. If you enjoy a stronger onion flavor or want to add more sweetness, you can use up to 1/6 of the onion. The finer you mince it, the better it will incorporate into the potato salad.

Add 2 tablespoons of mayonnaise to the bowl with the mashed potatoes and egg. Mix well until combined. Then, add the cooked Spam and minced onion, and mix again until everything is evenly distributed. Stir thoroughly to ensure all ingredients are coated in mayonnaise. If the mixture seems too dry or bland, add another tablespoon of mayonnaise and a pinch of salt, mixing as you go. It’s best to add mayonnaise gradually to avoid making the salad too rich.
