It’s incredibly simple! While anchovy broth truly elevates the flavor, this recipe uses a natural seasoning mix, plum extract, and perilla oil for a delicious result. Ingredients

  • Aged kimchi or leftover kimchi, 2 cups (including kimchi juice)
  • Perilla oil, 3 Tbsp
  • Plum extract, 2 Tbsp
  • Natural seasoning mix (or anchovy broth), 1 Tbsp

Don’t let leftover kimchi, its seasoning, or juice go to waste! Often, we set aside kimchi ingredients thinking we’ll use them later for pancakes or soup, only for them to become even more aged. Repurpose this aged kimchi to create an amazing Kimchi Jjim! Empty all your leftover kimchi, along with its sauce and seasoning, into a pot.

Add the natural seasoning mix (or anchovy broth), plum extract, and perilla oil to the pot with the kimchi. At this stage, no extra water is added; we’re relying solely on the kimchi’s natural liquid. Stir-fry everything together over medium-high heat. This sautéing process awakens the kimchi’s umami flavors.

Once the kimchi is sautéed, add enough water to just cover the ingredients. Bring it to a boil over high heat. Once it’s bubbling vigorously, reduce the heat to low and let it simmer gently until it thickens. Surprisingly, you don’t need to add scallions or garlic; the kimchi itself provides all the flavor needed!

Continue to simmer the Kimchi Jjim until the kimchi is tender and the sauce has reduced to a nice, thick consistency. Just before serving, drizzle a little more perilla oil over the top for an extra nutty aroma. Sprinkle with toasted sesame seeds if desired.
