Tteokbokki Ingredients- 50 chewy rice cakes (tteokbokki tteok, about 300g)
- 3 sheets of firm fish cake (eomuk)
- 1/2 large green onion
- 1/4 small cabbage

First, prepare the vegetables that will add flavor and texture to your Tteokbokki. Slice the fresh green onion into pieces roughly the same length as your rice cakes. These will release their sweetness as they cook, enriching the overall flavor.

Now, let’s create the delicious sauce. In a pot, combine 500ml of water with 2 Tbsp of anchovy-dashida, 1 Tbsp of sugar, 3 Tbsp of corn syrup, 2 Tbsp of soy sauce, 1 Tbsp of gochugaru, 3 Tbsp of gochujang, and 1 Tbsp of minced garlic. Whisk everything together to create a flavorful sauce base.

Once the sauce mixture comes to a rolling boil, add the prepared rice cakes, sliced green onions, cabbage, and fish cakes to the pot. Stir everything gently to ensure the ingredients are well combined and submerged in the sauce.

Begin by boiling the Tteokbokki over high heat. Stir occasionally to prevent the rice cakes from sticking together and to help the sauce coat them evenly. Bring the mixture back to a rolling boil before proceeding to the next step. This initial high heat helps the flavors meld.

As soon as the mixture returns to a rolling boil, reduce the heat to medium.
