Quickly Make a Nostalgic Lunchbox with Ingredients You Have at Home
I made an old-fashioned Korean lunchbox using ingredients I had at home. Although no special ingredients were used, it was a delicious lunchbox that any Korean would love.
Main Ingredients- 1 bowl of warm rice
- 1 egg
- A little cooking oil for frying
Cooking Instructions
Step 1
First, crack one egg into a bowl, add a pinch of salt, and whisk well. Heat a pan with a little cooking oil, pour in the whisked egg, and fry until golden brown on both sides. You can adjust the doneness to your preference, whether you like it sunny-side up or fully cooked.
Step 2
Slice the Spam (or luncheon meat) into about 0.5 cm thick pieces according to your preference. In the same heated pan with a little oil, cook the Spam slices for about 1-2 minutes per side until they are nicely browned. This step helps to render some of the fat and enhance the flavor.
Step 3
Finely chop the kimchi into bite-sized pieces. Add a little cooking oil to the pan and stir-fry the chopped kimchi over medium heat. Add 0.5 tsp of sugar and continue to stir-fry for 2-3 minutes until the kimchi softens and becomes glossy. The sugar helps to balance the sourness of the kimchi and adds a touch of sweetness.
Step 4
Gently spread one bowl of warm rice into the lunchbox, being careful not to press it down too firmly. Arrange the stir-fried kimchi attractively on top of the rice. The combination of rice and kimchi is always a winner!
Step 5
Next, place about 1.5 tablespoons of the stir-fried anchovies neatly next to the rice and kimchi. The savory and slightly sweet anchovy side dish will make your lunchbox even more flavorful.

Now, arrange the perfectly fried egg and the golden-brown Spam slices attractively on top of the other ingredients in the lunchbox. The colorful arrangement makes it look even more appetizing.

Finally, drizzle about 1 tablespoon of mayonnaise over the lunchbox according to your taste. The mayonnaise will gently coat the ingredients, adding a creamy richness and enhancing the overall flavor.

While the lunchbox is still warm, use a spoon to cut the fried egg and Spam into bite-sized pieces. Mix everything together – the rice, kimchi, anchovies, egg, and Spam – to enjoy a delicious blend of flavors.
