I made my favorite old-fashioned salad using leftover boiled eggs, fruits, vegetables, and nuts from my fridge. It’s delicious on its own or as a side dish.

Ingredients

  • 4 boiled eggs (pre-cooked and ready)
  • 1 apple (fresh and crisp)
  • 1 persimmon (ripe and sweet)
  • 2 slices canned pineapple (drained)
  • 1/2 cucumber (for a crunchy texture)
  • 200g Spam (blanched to remove excess fat)
  • A handful of walnuts (for nutty flavor)
  • 5 Tbsp mayonnaise (adjust to taste)

First, prepare the walnuts for a nutty aroma. Lightly toast them in a dry pan over low heat. Be careful not to burn them; once they turn a light brown color, remove from heat and spread on a rack to cool completely.

Cut the Spam into bite-sized pieces. Briefly blanching the Spam in boiling water helps remove excess fat, making it more savory. Drain the blanched Spam.

To add a crunchy texture, remove the core from the cucumber and slice it into bite-sized pieces. Slicing them not too thin will help maintain their satisfying crunch.

For the sweet persimmon, remove the stem, peel it, discard the seeds, and then cut into bite-sized pieces. Try to cut them carefully so they don’t become mushy.

For the fresh apple, remove the core and wash thoroughly. (Using the peel adds nutrients and texture.) Slice the apple into bite-sized pieces, similar to the persimmon.

Drain the canned pineapple and cut the fruit into bite-sized pieces. The sweet and sour notes of the pineapple will enrich the salad’s flavor.

Peel the pre-boiled eggs and cut them into bite-sized pieces. Cutting them too small can reduce the enjoyable texture, so aim for a moderate size.

Combine all prepared ingredients in a bowl. Add the blanched Spam as well.

Now, add the mayonnaise, which forms the core of the flavor. Start with about 5 tablespoons, and as you mix everything together, taste and adjust the amount of mayonnaise to your preference.
