Nostalgic Potato Salad (Sarada)
Homemade Traditional Korean Potato Salad Recipe
I’ve made a nostalgic ‘Sarada’ salad, tossed in creamy mayonnaise. It’s a simple yet delicious side dish or snack! If you’re suddenly wondering what to eat, whip this up quickly. 🙂
Ingredients- 1 potato
- 1 cucumber
- 2 hard-boiled eggs
- 1 Tbsp sugar
- 4 Tbsp mayonnaise
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare the main ingredient: 1 potato. Peel the potato thoroughly and cut it into bite-sized pieces, about 2cm cubes. Bring a pot of water to a boil, then add the cubed potatoes and cook for about 10 minutes until they are tender but still slightly firm to the bite – this ‘sal-kang-han’ texture is key. Drain the cooked potatoes and let them cool slightly.
Step 2
Next, prepare 1 fresh cucumber. Cut the cucumber in half lengthwise, and then use a spoon to scoop out and remove the seedy core. Removing the seeds helps prevent the salad from becoming watery and keeps it nice and crisp.
Step 3
Slice the deseeded cucumber into bite-sized pieces, similar in size to the potatoes (about 1.5cm). Try not to cut them too small, as they might get mashed when mixed.
Step 4
Boil 2 eggs until hard-boiled. Place the eggs in boiling water and cook for about 7-8 minutes, then immediately plunge them into cold water to stop the cooking and make them easier to peel. Once peeled, cut the hard-boiled eggs into bite-sized pieces. The eggs add a wonderful creaminess and nutty flavor to the salad.
Step 5
In a large mixing bowl, combine the cooked potatoes, sliced cucumber, and chopped hard-boiled eggs. First, add 1 tablespoon of sugar and gently mix to coat the ingredients. Adding sugar beforehand allows it to subtly sweeten the ingredients, enhancing the overall flavor.
Step 6
Finally, add 4 tablespoons of mayonnaise generously. Mayonnaise binds all the ingredients together, creating a smooth and rich texture. Feel free to adjust the amount of mayonnaise to your liking. Grind a pinch of black pepper over the mixture for extra aroma. Gently toss everything together until well combined, being careful not to mash the ingredients. Your delicious and creamy nostalgic Sarada is ready!
