Cooking Instructions

Step 1

First, prepare your fresh vegetables. Thinly shred the cabbage. Finely chop the onion and carrot. Don’t forget to finely chop the pickles too! (Oops, the pickles were missing from the photo!). Depending on your preference, lightly toast the bread slices in a pan with butter until golden brown, or use a toaster. I personally prefer the soft texture, so I skipped the toasting step this time. Feel free to customize!

Step 1

Step 2

In a bowl, crack the 2 eggs. Add the finely chopped onion and carrot. Season with a pinch of salt and pepper. Whisk everything together with a fork or whisk until well combined. This mixture will create a flavorful base for your toast.

Step 2

Step 3

Place the shredded cabbage in a bowl and rinse it briefly under cold water. Squeeze out any excess water thoroughly. This step helps to keep the cabbage crisp and removes any raw taste, making it more enjoyable.

Step 3

Step 4

Melt the butter in a non-stick pan over medium-low heat. Pour in the beaten egg mixture. Gently spread it out to form a round, flat shape, like a pancake. Cook until the edges are set, then carefully flip and cook the other side until golden brown. Be mindful of the heat to prevent burning.

Step 4

Step 5

Now for that signature sweetness! Sprinkle a light layer of sugar onto one side of the bread slices. This is the key to achieving that classic street toast flavor. Adjust the amount of sugar to your liking.

Step 5

Step 6

Carefully place the cooked egg patty onto the sugared side of one bread slice. The residual heat from the egg will slightly melt the sugar, creating a delightful sweet and savory combination. (Pro-tip: You can also cut the egg patty in half before placing it on the bread).

Step 6

Step 7

Layer a slice of cheese on top of the egg, followed by a generous sprinkle of the chopped pickles. The pickles add a welcome tanginess that cuts through the richness. Finally, generously drizzle 1-2 tablespoons of ketchup over the pickles. This is what makes street toast so craveable!

Step 7

Step 8

Almost done! Top the ketchup with a pile of the shredded cabbage. Then, place the other slice of bread on top to complete your delicious street toast. (For an extra layer of flavor, consider spreading a thin layer of mayonnaise on the inside of the top bread slice before closing it).
