Ingredients

  • Spaghetti noodles 80g
  • 1/3 Onion
  • 2 Sausages
  • A little Green onion (chopped)
  • 1 Egg
  • 3 Tbsp Ketchup
  • 1 tsp Sugar
  • 1 Tbsp Oyster sauce
  • A pinch of Parsley flakes (optional)
  • A pinch of Black pepper
  • A little Butter
  • A little Cooking oil

Cooking Instructions

First, prepare all your ingredients before you begin cooking. Parsley flakes are optional, but they add a lovely visual touch and a fragrant aroma if you have them.

Thinly slice the onion. Chop the green onion into similar lengths. Slice the sausages according to your preference – you can chop them or slice them into rounds.

Make a sunny-side-up egg with a runny yolk and set it aside on a plate. In a small bowl, whisk together the sauce ingredients: 3 tablespoons of ketchup, 1 tablespoon of oyster sauce, and 1 teaspoon of sugar. Having the sauce pre-mixed makes the cooking process much smoother.

Bring a large pot of water to a rolling boil. Once boiling, add the spaghetti noodles. To prevent them from sticking, add a small amount of cooking oil to the water. Cooking times can vary depending on the type of spaghetti, so check the package instructions. I usually cook mine for about 7 minutes. When the pasta is al dente, drain it but do not rinse it with cold water; just let the excess water drip off.

In a large pan, melt a little butter over medium heat. Add the sliced green onions and onions and sauté until they become translucent and fragrant.

Once the onions are aromatic, add the sliced sausages to the pan and stir-fry them lightly with the vegetables over medium heat until they are lightly browned.

Now, add the drained cooked spaghetti noodles to the pan.

Add half of the pre-mixed sauce to the noodles and vegetables. Stir-fry over medium heat, tossing gently to coat the spaghetti evenly with the sauce and ingredients. Taste and adjust seasoning if needed. If it’s not salty enough, add the remaining sauce and a sprinkle of black pepper to finish. Isn’t that simple?
