How to Make Delicious Broccoli Tofu Soup
A satisfying broccoli and tofu soup, perfect for a quick and healthy breakfast. It’s creamy, nutritious, and surprisingly easy to make!
Ingredients- 1/2 head broccoli (approx. 150g)
- 1/2 block soft or firm tofu (approx. 150g)
- 2 cups water (400ml)
- 1 Tbsp chicken stock (or vegetable stock)
- 1/2 medium onion (approx. 50g), finely chopped
- 1 Tbsp butter (15g)
- 1 Tbsp all-purpose flour (15g)
- Pinch of salt, to taste
- Pinch of black pepper, to taste
Cooking Instructions
Step 1
Start by thoroughly washing the broccoli and separating it into small florets. Drain the tofu slightly. In a blender, combine the broccoli florets, tofu, 2 cups of water, and 1 Tbsp of chicken stock. Blend until completely smooth. A creamy texture is key, so ensure there are no large chunks.
Step 2
Melt 1 Tbsp of butter in a medium saucepan over low heat. Gently melt the butter, being careful not to let it brown, until it becomes fragrant.
Step 3
Finely chop the half onion. Add the chopped onion to the melted butter in the saucepan. Sauté the onion over low heat until it becomes translucent and releases its sweet aroma. Cooking the onion well will deepen the soup’s flavor.
Step 4
Once the onion is tender, stir in 1 Tbsp of flour. Reduce the heat to medium-low and whisk or stir constantly to break up any lumps, cooking the flour with the onion for about 1-2 minutes. This step helps thicken the soup and creates a smooth, velvety consistency.
Step 5
Gradually pour the blended broccoli and tofu mixture into the saucepan, stirring continuously to combine smoothly with the sautéed onion and flour mixture. Once all ingredients are incorporated, bring the soup to a gentle simmer over medium-low heat, stirring frequently to prevent sticking. Let it simmer for about 5 minutes after it starts to bubble.
Step 6
Taste the soup and season with a pinch of salt as needed, and a sprinkle of black pepper to finish. Be mindful not to oversalt. Serve hot and enjoy this comforting and healthy soup!
