Nourishing Oak Chicken Soup
Making Oak Chicken Soup for Vitality and Energy Restoration
We always simmer this hearty soup to boost our energy and prepare for the hot summer. It’s a perfect way to nourish your body.
Main Ingredients- 3 Native Korean Chickens (Choose large, plump ones)
- 10 Abalones (for added vitality)
- 1 pack (100g) of Herbal Soup Bag for Baek숙 (Korean Chicken Soup)
- 5 pieces of Oak Tree Branches (use fresh ones)
- 8 Dried Red Dates
- 1/2 Onion
- 1/3 Carrot
- 2/3 Green Onion
- 300ml Glutinous Rice (soak in water for at least 30 minutes beforehand)
Seasoning and Broth- 1/2 bottle of Soju (for removing gaminess)
- 1 Tbsp Black Sesame Seeds
- Salt to taste
- A pinch of Black Pepper
- 1 Tbsp Sesame Oil
- 1/2 bottle of Soju (for removing gaminess)

Cooking Instructions
Step 1
I bought 3 native Korean chickens from the market to prepare. I’m having guests over today! ^^
Step 2
I pre-soaked the glutinous rice in water. It’s 300ml (a full rice bowl) and I’m doing this to make the porridge at the very end.
Step 3
Add the herbal soup bag, dried red dates, and oak branches to a pot. Simmer on low heat for about 1 hour and 30 minutes.
Step 4
This is what it looks like after simmering for 1 hour and 30 minutes.
Step 5
Wash the 3 chickens thoroughly under running water and place them in the pot. I left the medicinal herbs in because they are too good to discard. Simmer on medium heat with the lid on for about 1 hour until well cooked. Flip them once in between, especially ensuring the chicken legs are submerged. ^^
Step 6
Add the abalones during the simmering process. Clean the abalones with a brush and remove the ‘teeth’ with scissors. Pour about half a bottle of soju over the chicken. Continue to simmer for another 30 minutes. The total simmering time for the chicken in the pot is 1 hour and 30 minutes.
Step 7
This is the appearance after simmering for a total of 1 hour and 30 minutes.
Step 8
Remove the chicken and abalones. Ladle the rich broth into bowls. Garnish with chopped green onions, salt, and pepper to taste. The broth from this oak chicken soup is incredibly flavorful. ^^
Step 9
Here are the pre-chopped green onions, onion, and carrot.
Step 10
In the remaining broth, add the soaked glutinous rice and vegetables. Season with salt and pepper, and simmer gently over low heat for about 10 minutes. Stir in 1 tablespoon of sesame oil. Cover and let it steam for 5 minutes. For your reference, this amount makes about 6 servings of porridge.
Step 11
Sprinkle with black sesame seeds at the end for an even more appetizing look.
