Main Ingredients- 2 Korean Chickens (size #9)
- 2 cups Sweet Rice (glutinous rice)
Cooking Instructions
Step 1
First, carefully prepare the chickens by cleaning them thoroughly under running water. Remove any internal organs or excess fat, and cut them in half for easier handling.
Step 2
Rinse the sweet rice about twice. Discard the first and second rinsing water, as it may contain some nutrients.
Step 3
Save the third, fourth, and fifth rinsing waters and add them to the pot. This will form the base of our flavorful broth.
Step 4
Lightly rinse the prepared medicinal herbs in cold water one or two times to remove any impurities. Be gentle to avoid washing away their beneficial properties.
Step 5
Add all the rinsed medicinal herbs to the pot.
Step 6
Pour in enough water to fully submerge the medicinal herbs. Using too much water might dilute the broth’s concentration.
Step 7
Now, bring the pot to a boil over high heat. Boiling on high heat helps to quickly extract the flavors and aromas from the herbs.
Step 8
Once the broth begins to boil vigorously, reduce the heat to medium. Maintaining very high heat can make the broth cloudy.
Step 9
Continue to simmer over medium heat, covered, for about 15-20 minutes. This allows the medicinal flavors to infuse into the water before adding the chicken.
Step 10
During the simmering process, if the amount of broth reduces by about half, add a little warm water to replenish it. Keeping the broth at a good level will contribute to a richer flavor when cooking the chicken.
Step 11
Once the broth returns to a boil, reduce the heat to very low. Cover and simmer gently for at least 1 hour, or until the broth is deeply infused with flavor. This slow simmering is key to the rich taste of Samgyetang.
Step 12
Remove all the cooked medicinal herb solids from the broth. You now have a clear and fragrant Samgyetang base ready.
Step 13
Place the sweet rice into a mesh bag or cheesecloth pouch and tie the opening securely. This will help the rice cook evenly and maintain its shape without becoming mushy.
Step 14
Add the prepared chickens to the clear herbal broth. Ensure the broth covers the chickens sufficiently.
Step 15
Place the tied sweet rice pouch into the pot along with the chicken. **Tip:** If you have whole garlic cloves, adding them at this stage will enhance the flavor even further.
Step 16
Cover the pot again and continue to simmer over medium heat for about 40 minutes to 1 hour. **Tip:** The cooking time may vary depending on the size and thickness of the chicken. The chicken is done when a fork inserted into the thigh meat yields clear juices.
Step 17
Time to enjoy your delicious Samgyetang! Prepare a dipping sauce by placing 1 tablespoon of sea salt and 1 tablespoon of sesame seeds on a cutting board. Finely chop them together with a knife to create a savory and salty dipping sauce. Dip the tender chicken meat into this special sauce for an even more delightful experience.
Step 18
Your delicious and nourishing Samgyetang is complete! Enjoy a healthy meal with its warm broth and tender chicken.
