Rice Cooking Ingredients
- 300g soybean sprouts
- 200g beef (for bulgogi or sirloin)
- 1 head napa cabbage kimchi (aged kimchi recommended)
- 4 dried shiitake mushrooms
Beef Marinade
- 2 Tbsp soy sauce
- 1/2 Tbsp sesame oil
- Pinch of black pepper
- 2 Tbsp soy sauce
- 1/2 Tbsp sesame oil
- Pinch of black pepper
Cooking Instructions
Step 1
Rinse the soybean sprouts thoroughly under running water several times and drain them well. These days, you can even find green soybean sprouts without husks, which are even cleaner to use.
Step 2
Pat the beef dry with paper towels to remove excess blood. Then, cut it into bite-sized pieces. If using sirloin, trim off any excess fat or tough sinew for a more tender bite. Soak the dried shiitake mushrooms in warm water until softened, then slice them to your desired size.
Step 3
Now, let’s marinate the beef. In a bowl, combine 2 tablespoons of soy sauce, 1/2 tablespoon of sesame oil, and a pinch of black pepper. Gently mix it all together. This marinade will add a wonderful depth of flavor to the beef. Season the sliced shiitake mushrooms with the same marinade.
Step 4
It’s best to use the outer leaves of the napa cabbage kimchi for a better texture. Squeeze out the excess juice from the kimchi and chop it into bite-sized pieces. Well-fermented kimchi will add a delicious umami flavor to the soybean sprout rice, making it even tastier! Mix the chopped kimchi with a little sesame oil and toasted sesame seeds.
Step 5
Now, let’s prepare to cook the soybean sprout rice. Rinse the rice and place it in the rice cooker pot. Layer the soybean sprouts, marinated beef, and shiitake mushrooms on top of the rice in that order. Finally, cover everything with the seasoned kimchi. Use about 10% less water than you normally would for cooking rice; this prevents the rice from becoming too mushy and results in perfectly fluffy grains.
Step 6
Select the ‘Multi-grain’ or ‘Mixed Rice’ setting and the ‘High Pressure’ mode on your electric pressure cooker. The cooking time will be approximately 47 minutes. Using a pressure cooker helps retain the moisture from the soybean sprouts, resulting in a wonderfully tender and flavorful rice.
Step 7
Once the cooking cycle is complete, your delicious soybean sprout rice made with the electric pressure cooker is ready! Open the lid to an inviting aroma of soybean sprouts that will surely whet your appetite. Remember, layering the ingredients on top of the rice and adjusting the water amount before cooking are key to achieving perfectly fluffy soybean sprout rice.
