  • 1 handful Bean Sprouts (approx. 30g)
  • 2 servings Rice Noodles (approx. 100-120g for a baby)
  • 1/2 Onion
  • Pinch of Korean sea salt

Cooking Instructions

Step 1

First, prepare the chicken broth. If you’re using homemade chicken broth, make sure to use only the clear liquid after simmering the chicken. It’s important to meticulously skim off any impurities or oil floating on the surface to maintain a clean and clear broth.

Step 2

Tip: If you want to simplify the preparation process, you can boil the chicken broth the night before and refrigerate it, or use store-bought low-sodium chicken stock for added convenience.

Step 2

Step 3

Now, let’s prepare the ingredients for the rice noodles. Thinly slice the onion into pieces about 0.5cm thick, suitable for your baby to eat. They will cook down nicely with the noodles, blending seamlessly into the dish.

Step 3

Step 4

Bring a pot of generously salted water to a rolling boil. Once the water is boiling, add the rice noodles and cook for about 8-10 minutes. Stir occasionally to prevent the noodles from sticking together. Check for doneness and if needed, cook a little longer until they reach your baby’s preferred tenderness. Rice noodles typically cook well without pre-soaking.

Step 4

Step 5

Once the noodles are cooked, immediately drain them and rinse under cold water to stop the cooking process. Drain well in a colander and set aside. This step helps prevent the noodles from becoming mushy or clumping.

Step 5

Step 6

In a wide pot, pour in 1L of the prepared chicken broth and bring it to a simmer over medium heat. Add a tiny pinch of Korean sea salt to lightly season the broth. As the broth simmers, skim off any impurities that rise to the surface again to keep the broth clear.

Step 6

Step 7

Once the broth is gently boiling, add the thinly sliced onions first and let them simmer for a moment. As the onions begin to turn translucent, add the beef brisket. Cook until all the ingredients are tender. Beef brisket cooks quickly, so be careful not to overcook it.

Step 9

Finally, add the bean sprouts and cook on high heat for about 1 minute. Overcooking the bean sprouts will make them lose their crispiness, so it’s best to cook them briefly to maintain their fresh crunch. Once the bean sprouts are cooked, turn off the heat immediately. You’re almost done!

Step 9

Step 10

Pour the warm chicken broth over the prepared rice noodles in a serving bowl, and your delicious rice noodle dish for your baby is ready! 🙂 This is a wonderfully nourishing meal for your child, packed with the deep flavor of chicken broth and a variety of fresh ingredients like beef brisket, bean sprouts, and onions, even without additional side dishes. Since it’s made with rice, it’s a safe and excellent option for babies sensitive to wheat. Enjoy watching your little one slurp up the noodles, savor the beef, and munch on the crisp bean sprouts! This one-bowl meal is sure to be a hit. 🙂
