Sandwich Ingredients

  • 1/2 eggplant
  • 1/2 zucchini
  • 1/4 small pumpkin (kabocha squash)
  • 1/2 bell pepper (use various colors for visual appeal)
  • 2 slices of your favorite bread (e.g., whole wheat, ciabatta)
  • 2 slices of cheddar or mozzarella cheese (or to taste)

Dressing Ingredients

  • Balsamic dressing (store-bought or homemade)
  • A little olive oil

First, prepare the vegetables. Slice the eggplant and zucchini into 1cm thick rounds. Remove the seeds from the pumpkin and slice it into 1cm thick pieces, keeping the peel on. Deseed the bell pepper and cut it into large pieces. Lightly oil a grill pan or a regular frying pan. Grill the prepared vegetables on both sides until they have nice grill marks and are tender-crisp. Turning them as they grill will ensure even cooking and a beautiful appearance. Avoid overcooking; the vegetables should retain a slight bite.

Next, prepare the dressing to enhance the sandwich’s flavor. I’m using a simple homemade balsamic olive oil dressing. Whisk together olive oil and balsamic vinegar in a 2:1 ratio. For a touch of sweetness and seasoning, you can add a little honey, salt, and pepper to taste. Alternatively, a good quality store-bought balsamic dressing works perfectly fine.

Now it’s time to assemble the sandwich. Slice your bread in half horizontally. Lightly brush the inside of the bread with the balsamic dressing. Layer the grilled pumpkin, zucchini, and eggplant on the bottom slice of bread. Arrange them aesthetically to showcase the colorful medley of vegetables.

Finally, add the large pieces of bell pepper on top of the other vegetables. Drizzle generously with more balsamic dressing to infuse the vegetables with flavor.
