  • 1/4 block firm tofu (approx. 100g)
  • A small amount of broccoli

  • 3-4 Tbsp all-purpose flour

Let’s start by preparing the vegetables for our patties. Feel free to use whatever vegetables you have on hand! Finely mince the onion, carrot, broccoli, and bell pepper after washing them thoroughly and removing any seeds or tough parts. These will add great flavor and texture. It’s best to squeeze out as much water as possible from the tofu using a cheesecloth or paper towels to prevent the mixture from becoming too watery. However, if you’re short on time or prefer not to, you can use it as is. Adding tofu makes the donggeurangttaeng wonderfully soft and mild in flavor.

In a large bowl, combine the 2 cups of ground pork with the squeezed tofu, and the finely minced onion, carrot, broccoli, and bell pepper. If you like a bit of heat, you can also add some finely chopped spicy red or green chilies for an extra kick! Chilies help cut through the richness of the pork and add a delicious depth of flavor. However, if you’re making these for children, it’s best to omit the chilies. I skipped them for my kids.

Now, it’s time to season. Add a pinch of salt and a dash of black pepper to the mixture. You can adjust the seasoning to your taste. Knead the mixture thoroughly with your hands until it becomes cohesive and slightly sticky. This will help the patties hold their shape well.
