Ingredients

  • 2 fresh abalones
  • 1/4 onion
  • 1/8 carrot
  • 1 cup soaked rice (soaked for at least 1 hour)
  • 6-7 cups water (about 6-7 times the amount of rice)

Seasoning

  • 1-2 Tbsp sesame oil

Cooking Instructions

Step 1

First, let’s prepare the abalone. Clean the abalones thoroughly by scrubbing them with a brush to remove any dirt. Then, gently insert a spoon between the abalone shell and the meat and carefully pry them apart.

Locate the hard ‘beak’ or ‘teeth’ part on the underside of the abalone meat, and the dark guts. Remove the beak and discard the guts. Rinse the abalone meat under running water.

Finely chop the cleaned abalone. Place the chopped abalone into a blender with 1-2 cups of water and blend until smooth. (Adding a little water helps it blend better. You can also add the soaked rice to the blender at this stage.)

Finely dice the onion and carrot. Aim for a very small dice so they integrate well into the porridge.

Heat 1-2 tablespoons of sesame oil in a wide, deep pot over medium heat. Add the blended abalone mixture, the soaked and drained rice, and the diced onion and carrot. Stir-fry for about 2-3 minutes, until the rice grains become translucent and the abalone’s raw smell dissipates. Pour in the 6-7 cups of water and bring to a boil over high heat.

Once the porridge comes to a boil, reduce the heat to low. Let it simmer, stirring occasionally, until the rice grains break down and the porridge thickens to your desired consistency. Stirring prevents the rice from sticking to the bottom. Season with salt or soy sauce to taste. Enjoy your nourishing abalone porridge!
