Seasoning
  • 2 Tbsp Perilla Oil
  • 1 Tbsp Minced Garlic
  • 1/2 Tbsp Anchovy Sauce

  • 4 Tbsp Ground Perilla Seeds
  • Pinch of Salt
  • Pinch of Sesame Seeds

Cooking Instructions

Step 1

First, finely chop the green onion (about half a stalk). The white and green parts can both be used, and chopping them finely will release a wonderful aroma as they cook.

Step 2

Gently rinse the 200g of King Oyster Mushrooms. Trim off the very bottom ends if they are tough or dirty. Then, tear the mushrooms into bite-sized pieces by hand rather than slicing them. This method helps maintain a pleasant chewy texture.

Step 3

Now, let’s start stir-frying. Heat a pan over medium-low heat and add 2 tablespoons of perilla oil for its rich, nutty flavor. Add the chopped green onion and 1 tablespoon of minced garlic. Sauté until the aromatics are fragrant and lightly golden, being careful not to burn them.

Step 4

Once the green onion and garlic become fragrant and slightly golden, add all the prepared King Oyster Mushrooms to the pan. Continue to stir-fry over medium-low heat until the mushrooms release their moisture and begin to soften slightly. This step is key to developing their texture.

Step 5

When the mushrooms have softened a bit, add 1/2 tablespoon of anchovy sauce to season the dish. Anchovy sauce adds a wonderful depth of umami. If you don’t have anchovy sauce, soy sauce can be used as a substitute.
