As the weather gets colder, our bodies crave nourishing foods! This time, I’ve made a delicious seasoned ginseng dish: Ginseng Stir-Fry. It’s perfect for boosting your health and delighting your taste buds. The aromatic ginseng is coated in a special sweet and spicy sauce, then grilled to perfection. This dish is not only a wonderful way to enjoy the health benefits of ginseng but also a delightful addition to any meal, suitable for both everyday enjoyment and special occasions. Cooking Instructions
Step 1
First, it’s crucial to thoroughly clean the ginseng. Place the ginseng roots under running water and use a soft brush to gently scrub away any soil or dirt.

After the initial brushing, rinse the ginseng once more with clean water. This ensures any remaining soil or debris is completely removed.
Step 3
Pat the washed ginseng dry using kitchen towels. Excess moisture can cause oil to splatter during cooking or prevent the sauce from adhering properly, so drying it well is key.
Step 4
Carefully trim off any remaining soil near the ginseng’s crown and any thin, hairlike rootlets with a knife. Nicely prepared ginseng looks much more appealing.

Cut the prepared ginseng in half lengthwise into manageable pieces. Then, gently tap the pieces with the back of a knife (the dull side). This helps to tenderize the ginseng fibers, resulting in a more pleasant texture when eaten. Be careful not to tap too forcefully.

Now, let’s make the delicious sauce! In a bowl, combine 1 Tbsp Gochujang, 1 tsp Gochugaru, 1 Tbsp Oligodang, 2 Tbsp Mirin, 1/2 Tbsp Soy Sauce, 1/2 Tbsp Minced Garlic, 1 Tbsp Olive Oil, and a pinch of sesame seeds. Whisk everything together until well combined and smooth. You can substitute honey for oligodang if you prefer.

Before grilling, lightly grease your grill rack or frying pan with a little oil. This prevents the ginseng from sticking and helps it achieve a beautiful golden-brown color. Arrange the prepared ginseng pieces on the oiled surface.

Brush the prepared sauce evenly over the ginseng pieces. Using a pastry brush can help ensure a consistent coating. Make sure both sides of the ginseng are generously covered with the sauce.

Now, it’s time to grill the ginseng. Cook over medium-low heat, flipping the ginseng pieces occasionally to ensure they cook evenly. Be mindful of the heat to prevent the sauce from burning. Grill until the ginseng is tender and has a lovely roasted aroma.
