Flavorful Seasoning Sauce Ingredients

  • 2 Tbsp minced beef
  • 1 Tbsp cooking wine (or mirin)
  • Pinch of black pepper
  • 0.5 Tbsp minced spicy green chili (adjust to taste)
  • 0.5 Tbsp minced green onion
  • 4 Tbsp soy sauce
  • 0.5 Tbsp plum extract (adds sweetness and gloss)
  • 1 Tbsp sesame oil
  • 0.5 Tbsp gochugaru (Korean chili flakes, for a spicier kick)
  • 1 Tbsp toasted sesame seeds or crushed sesame seeds

First, wash the bean sprouts thoroughly. In a pot, add 1/2 cup (approx. 100ml) of water and the washed bean sprouts. Close the lid tightly from the start and bring to a boil over high heat. Once steam begins to rise, cook for exactly 2 more minutes to keep the bean sprouts crisp.

★ Here’s the most crucial tip! Do not discard the broth leftover from boiling the bean sprouts! This broth will add a wonderfully savory and deep flavor to your rice. Drain the bean sprouts using a sieve and set them aside, while carefully collecting the resulting broth in a clean bowl.

Now it’s time to cook the rice. Place 2 servings of rice in your rice cooker as you normally would. It’s best to use slightly less water than usual for this step. Use the collected bean sprout broth from step 2 to adjust the water level for the rice. If you don’t have enough bean sprout broth, add a little plain water to reach the desired amount. Press the ‘cook’ button for white rice on your rice cooker to prepare the delicious bean sprout rice.

While the rice is cooking, let’s make the seasoning sauce. Heat a pot over medium heat and add 2 tablespoons of minced beef. Stir-fry until the moisture evaporates and the beef becomes crumbly. It’s important to cook it until it’s well-seared. Adding 1 tablespoon of cooking wine (or mirin) and a pinch of black pepper at this stage effectively removes any gamey odor from the beef.
