Main Ingredients

  • 130g Zucchini, sliced thickly
  • 80g Carrot, julienned finer than zucchini
  • 200g Bean Sprouts, washed clean
  • 350g Radish, julienned thinly along the grain
  • 2-3 Eggplants (approx. 180g), sliced thickly
  • 200g Ground Beef, marinated

Seasoning Sauce (Tablespoon Measurement)

  • 2 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Maesilcheong (Plum syrup)
  • 0.5 Tbsp Oligodang (Corn syrup)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Sesame Seeds

Cooking Instructions

Step 1

Place the thickly sliced zucchini in a wok or pan. Sprinkle with 0.3 tsp of fine salt and let it sit for 10 minutes to draw out moisture. After draining, add 0.5 Tbsp cooking oil and 0.3 tsp minced garlic. Stir-fry over medium heat for 3 minutes. Finish by drizzling with 0.5 Tbsp sesame oil and a sprinkle of sesame seeds.

Julienne the carrots even finer than the zucchini. Heat a pan over medium heat, add half a tablespoon of oil, and stir-fry the carrots with a pinch of salt (about 2 pinches) for about 2 minutes. The key is to keep them slightly crisp.

Blanch the washed bean sprouts in boiling water for just 2 minutes once the water returns to a boil. Immediately rinse them under cold water, drain thoroughly, and toss with 1 tsp of soy sauce for soup, 2 tsp of sesame seeds, and 1 tsp of sesame oil. Season to taste with salt. (Note: The seasoning for bean sprouts is measured in teaspoons.)

Slice the eggplants thickly. Heat one tablespoon of chili oil in a pan. Add the sliced eggplant and about 1/4 of a sliced onion. Stir-fry over medium heat for about 3 minutes. Pour in the pre-mixed sauce (2 Tbsp soy sauce, 1 Tbsp oyster sauce, 0.5 Tbsp sugar, 0.5 Tbsp minced garlic, 0.5 Tbsp chili powder) and stir-fry until the sauce coats the eggplant well.

Julienne the radish thinly along the grain and place it in a wok. Mix with half a tablespoon of salt and let it marinate for 20 minutes. Squeeze out the excess water from the radish. In a pan, add 1 Tbsp cooking oil and 0.5 tsp minced garlic. Stir-fry over medium heat, covered, for 2 minutes. Then, add half a cup of water, 0.5 Tbsp soy sauce for soup, and 2 Tbsp perilla seed powder. Cook until the radish is tender-crisp, then finish with a drizzle of 1 Tbsp perilla oil.

Now, let’s stir-fry the ground beef. Add the ground beef, which has been marinated in a mixture of 3 Tbsp soy sauce, 3 Tbsp rice wine, 1 Tbsp chopped green onion, 1 Tbsp minced garlic, 0.2 tsp minced ginger, 1 Tbsp sugar, and a pinch of black pepper, to a pan and stir-fry until nicely browned and flavorful.

Prepare the delicious homemade Bibimbap sauce. Mix 2 Tbsp gochujang, 1 Tbsp maesilcheong, 0.5 Tbsp oligodang, 1 Tbsp water, 1 Tbsp sesame seeds, and 1 Tbsp sesame oil. Stir well until combined. You can adjust the seasoning to your preference.
