Today, we’ll be making rice with a special grain called ‘Nokmi.’ Nokmi, as its name suggests, is a green-hued rice. It’s in its brown rice state, meaning it’s rich in beneficial GABA (Gamma-Aminobutyric Acid). Because it’s not polished, its nutrients are fully preserved. It has a wonderfully chewy texture, becoming more savory the more you chew, with a subtle taste reminiscent of green peas. Notably, it contains 20-75% more lysine, an essential amino acid, compared to regular white rice, making it excellent for growing children.   • Nokmi Rice 1 soju cup

Cooking Instructions

Step 1

First, prepare the white rice and Nokmi rice in a 10:1 ratio. While the measurement in the photo uses a soju cup, you can use any measuring cup you have at home as long as you maintain the correct ratio for delicious Nokmi rice.

If you don’t have a soju cup, a standard rice measuring cup works well. One rice measuring cup is approximately equivalent to three soju cups. So, to clarify, 9 soju cups would be about 3 rice measuring cups. Please adjust your measurements accordingly to maintain the 10:1 ratio.

Step 3

The final ratio of white rice to Nokmi rice should be 10:1.

Step 4

When washing the rice, discard the very first rinse water quickly, as it contains most impurities. Then, gently rub the rice grains with your hands and rinse about 3-4 times until the water runs clear. Soaking the rice for about 30 minutes is ideal. After soaking, drain the rice thoroughly in a sieve.

Step 5

Now, place the washed and soaked rice and Nokmi into your rice cooker. The amount of water can vary slightly depending on the type and age of the rice, but generally, use about 1.2 times the volume of rice in water.

Step 6

Cook the rice just as you would normally cook white rice. No special settings are needed; use your standard ‘cook’ function, and it will turn out perfectly.
