Salad Ingredients- 1-2 Eggs (hard-boiled)
- 1 handful Chickpeas (cooked or canned)
- 1/2 Cucumber
- 1/2 Avocado (ripe)
- 1 Tomato
- A small amount of Strawberries or seasonal fruit
- A few Olives
Tangy Yogurt Dressing- 3 Tbsp Yogurt (plain, unsweetened recommended)
- 2 Tbsp Mayonnaise
- 1/2 Tbsp Whole Grain Mustard
- 1/2 Tbsp Lemon Juice
- 1/2 Tbsp Grated Parmesan Cheese
- Pinch of Black Pepper
- 3 Tbsp Yogurt (plain, unsweetened recommended)
- 2 Tbsp Mayonnaise
- 1/2 Tbsp Whole Grain Mustard
- 1/2 Tbsp Lemon Juice
- 1/2 Tbsp Grated Parmesan Cheese
- Pinch of Black Pepper
Cooking Instructions
Step 1
If using dried chickpeas, rinse them and soak in water for 3 hours. Then, place them in a pot with water and boil for about 30 minutes until tender. Drain the cooked chickpeas and let them cool. If using canned chickpeas, simply rinse and drain.
