Bean Sprout Rice Ingredients
- 3 cups short-grain rice
- 250g fresh bean sprouts

- 2 shiitake mushrooms

- 300g minced beef
- 1 Tbsp minced garlic
- 2 Tbsp store-bought galbi (ribs) sauce
Special Sauce Ingredients
- 1 Tbsp oligosaccharide
- 1 Tbsp sesame oil
- 2 Tbsp soy sauce
- 1 Tbsp sesame seeds
- 1 Tbsp oligosaccharide

Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under cold water several times. While rinsing, pick out any loose hulls or spoiled sprouts for a cleaner result.

Peel the carrot and slice it into thin julienne strips. This will add color and texture to the rice.

I’ve prepared two shiitake mushrooms. One is thinly sliced, and the other is finely minced. Mincing it helps ensure that even picky eaters will enjoy it. Sliced mushrooms add a nice bite, while minced ones blend seamlessly into the rice.

Now, it’s time to blanch the bean sprouts. Fill a pot with plenty of water and bring it to a boil. Once boiling, add the washed bean sprouts. Cover the pot and blanch for about 4-5 minutes. **Tip:** If you start blanching with the lid on, keep it on until the end. If you start with the lid off, keep it off throughout. This is crucial to prevent any ‘beany’ odor. This is an important tip for eliminating the characteristic smell of bean sprouts, so be sure to follow it!

In a bowl, combine 300g of minced beef with 1 Tbsp of minced garlic and 2 Tbsp of store-bought galbi sauce. Mix well and let it marinate for a short while. Transfer the marinated minced beef to a frying pan and cook over medium heat. Use chopsticks or a fork to break up the meat as it cooks, creating a crumbly ‘soboro’ texture.
