Quail Egg Soy Braise Recipe

As a new mother recovering after childbirth, I wanted to make a delicious side dish to send to my daughter. This recipe is made with love and care, perfect for a nourishing meal.
Main Ingredients- 1kg Peeled Quail Eggs (pre-shelled for convenience!)
Braising Sauce- 1 soju cup Soy Sauce (approx. 150ml)
- 1 soju cup Water (approx. 150ml)
- 1 soju cup Corn Syrup or Oligosaccharide (approx. 150ml, for a glossy finish!)
- 1 soju cup Soy Sauce (approx. 150ml)

Cooking Instructions
Step 1
First, gently rinse the peeled quail eggs under running water. They are ready to use without further peeling.

Step 2
In a braising pot or deep pan, combine 1 soju cup of soy sauce, 1 soju cup of water, and 1 soju cup of corn syrup or oligosaccharide. (Tip: Using oligosaccharide results in a softer sweetness, while corn syrup provides a deeper sheen.)

Step 3
Once the sauce mixture begins to boil over medium heat, add all the prepared peeled quail eggs. Gently stir to ensure the eggs are evenly coated with the sauce.

Step 4
As the sauce starts to reduce, lower the heat slightly. Stir continuously to prevent sticking and observe the color of the quail eggs. They should begin to develop a light brown hue.

Step 5
Continue to simmer gently until the sauce thickens and coats the quail eggs with an appetizing caramel color. If you desire a deeper color, you can add soy sauce, 1 tablespoon at a time, stirring until the desired shade is achieved. Think of it as dressing the eggs in a delicious glaze!

Step 6
Finally, sprinkle generously with toasted sesame seeds for a nutty aroma and a beautiful finish. A pinch of black pepper can also enhance the flavor. Your delicious quail egg soy braise is now ready!
