Main Ingredients- 30g fresh chives
- 2 fresh eggs
- 1/4 sweet onion
- 1 shiitake mushroom
- 1L water
Seasoning & Flavoring- 2 Tbsp soup soy sauce (Guk-ganjang)
- 2 Tbsp anchovy sauce (Myeolchi-aekjeot)
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, trim the tough stems from the shiitake mushroom. Then, thinly slice the mushroom and the onion into strips. Slicing them thinly will help their flavors infuse better into the soup.
Step 2
Wash the chives thoroughly and cut them into approximately 4-5 cm lengths. Cutting them into these lengths will preserve a pleasant texture. Avoid cutting them too finely, as they might become too soft.
Step 3
In a bowl, crack the two eggs. Gently whisk them with a fork or whisk until the yolks and whites are well combined. Whisking them smoothly will prevent lumps and ensure beautiful, fluffy cooked eggs.

Now, pour 1L of water into a pot. Add 2 Tbsp of soup soy sauce, 2 Tbsp of anchovy sauce, and the sliced shiitake mushrooms. Bring this mixture to a rolling boil over high heat with the lid off.

Once the soup is boiling, reduce the heat to medium. Add 1 Tbsp of minced garlic and the sliced onion. Let it come back to a boil.

When it starts boiling again, lower the heat to low. Slowly drizzle the whisked egg mixture in a circular motion around the edges of the pot. Pouring the egg slowly will create lovely, soft curds.

After adding the egg, let it cook for a moment and taste the soup. If it feels a bit bland, add a tiny pinch of salt to adjust the seasoning to your preference.
