Ingredients

  • 2 Samjin Fish Cakes ‘Fisherman’s Bar’ (or any store-bought fish cake)
  • 1 cup Green Onions, finely chopped
  • 6-8 cloves Garlic, thinly sliced
  • 3 Peperoncino or dried Cheongyang peppers, crushed
  • 2 Tbsp Cooking Oil
  • 1 Tbsp Sesame Seeds
  • 1 bowl of Rice (day-old cold rice recommended)

Cooking Instructions

First, chop the fish cakes into bite-sized pieces. I’m using Samjin Fish Cake ‘Fisherman’s Bar’, but any store-bought fish cake will work well. Wash and finely chop the green onions. Peel and thinly slice the garlic. If using peperoncino or dried Cheongyang peppers, remove the stems and crush them to enhance their spicy aroma.

Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced garlic and crushed peperoncino (or dried chilies). Stir-fry slowly, allowing the garlic to release its fragrance. Be careful not to burn the garlic, as this is key to developing a deep flavor in your fried rice.

Once the garlic begins to turn lightly golden, add the chopped green onions. Stir-fry over medium-high heat for about 1 minute until fragrant. Sautéing them briefly will maintain their crisp texture.

Now, add the chopped fish cakes to the pan. Stir-fry quickly over high heat for 1-2 minutes. The trick is to stir-fry briskly to prevent the fish cakes from sticking to the pan. A slight browning on the fish cakes will enhance the overall flavor.

Using cold, day-old rice yields a fluffier fried rice. Add one bowl of rice to the pan. Use a spatula to break up the rice clumps and mix everything together – fish cakes, green onions, and garlic. Ensure the rice is evenly distributed and doesn’t clump together.
