Main Ingredients- 3 sheets of seaweed (gim)
- 2 bowls of warm cooked rice
- 6 fresh perilla leaves (kkaennip)
- 4 eggs
- 2 Tbsp milk
- 3 strips of thick-cut bacon
- 1/3 carrot
- 2 roots of fresh ginseng
- 3 strips of sweet and sour pickled radish (danmuji)
Ginseng Simmering Sauce- 2 Tbsp soy sauce
- 2 Tbsp oligodang (oligosaccharide syrup)
- 1.5 Tbsp water
- 1/3 tsp salt
- 0.5 tsp sesame oil
- 0.5 tsp crushed sesame seeds
- 2 Tbsp soy sauce
- 2 Tbsp oligodang (oligosaccharide syrup)

Cooking Instructions
Step 1
First, carefully prepare all your ingredients. – Gently scrub the ginseng with a soft brush or toothbrush to remove any dirt and wash it thoroughly. – Julienne the carrot and the prepared ginseng. – In a bowl, whisk together 4 eggs and 2 Tbsp of milk to create an egg mixture. – Rinse the perilla leaves under running water and gently pat them dry with a paper towel.
Step 2
Let’s make the soy sauce-based seasoning for the delicious simmered ginseng. Using measuring spoons, combine 2 Tbsp of soy sauce, 2 Tbsp of oligodang, and 1.5 Tbsp of water to create a well-balanced sweet and savory sauce.
Step 3
Heat about 0.5 Tbsp of olive oil in a pan over low heat. Add the julienned carrots and stir-fry them gently until they become slightly tender. Once cooked, remove from heat and set aside to cool slightly. This process helps to bring out the natural sweetness of the carrots.
Step 4
Add another 0.5 Tbsp of olive oil to the same pan. Add the julienned ginseng and stir-fry quickly for about 30 seconds until fragrant. Pour in all the prepared soy sauce mixture and continue to stir-fry for another 30 seconds, ensuring the ginseng is evenly coated with the sauce. Be careful not to let it burn.
Step 5
Add about 0.5 Tbsp of olive oil to the pan again. Pour in a thin layer of the egg mixture and cook until the edges start to set and the egg looks slightly fluffy. Carefully flip it over and cook the other side until golden brown. Repeat this process two more times to create a total of 3 thin omelets. Let the cooked omelets cool slightly before cutting, which makes them easier to handle.
Step 6
Now it’s time to cook the bacon. Heat the pan over medium heat, then add the bacon strips. Cook until both sides are golden brown and crispy. Wipe away excess grease with a paper towel as needed for a cleaner result.
Step 7
While all the ingredients are cooling, let’s season the rice. To 2 bowls of warm rice, add a pinch of salt, 0.5 tsp of sesame oil, and 0.5 tsp of crushed sesame seeds. Mix gently to combine, creating flavorful seasoned rice.
Step 8
Now, let’s assemble the triangle kimbap! Spread a thin layer of the seasoned rice onto a sheet of seaweed. Then, layer the ingredients neatly: perilla leaves, omelet slices, cooked bacon, pickled radish, julienned carrots, and the delicious simmered ginseng. (You can also add imitation crab sticks if you have them.)
Step 9
Carefully roll up the seaweed tightly, shaping it into a triangle kimbap. Lightly brush the outside of the finished triangle kimbap with sesame oil for a nice sheen. Slice them into manageable pieces and arrange them on a plate. Your nutritious and special ginseng triangle kimbap is now complete! Enjoy!
