Main Ingredients- 3 Tbsp carrot, finely chopped
- 2 shiitake mushrooms, stems removed and finely chopped
- 1/2 king oyster mushroom, finely chopped
- 3 cups cabbage, thinly shredded
- 1/4 onion, finely chopped
- 1 egg
- 12 Tbsp all-purpose flour
- 6 Tbsp pancake mix (or tempura powder)
- 1 slice processed cheese
- 1/2 tomato, thinly sliced
- 2 slices bread
- 1.5 strips bacon, chopped

Cooking Instructions
Step 1
First, prepare the vegetables and bacon. Wash and finely chop or thinly shred the carrot, shiitake mushrooms (remove the tough stems), king oyster mushroom, cabbage, and onion. Chop the bacon into bite-sized pieces. Chopping the ingredients finely ensures they mix well with the batter and cook through properly.
Step 2
In a large bowl, crack one egg. Add 12 tablespoons of all-purpose flour and 6 tablespoons of pancake mix. Mix them roughly with a spatula or whisk until the dry ingredients are somewhat combined. Then, pour in 1 cup (200ml) of water and gently stir until you have a smooth, relatively thin batter without lumps. Don’t worry about overmixing.
Step 3
Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle a portion of the batter onto the pan and spread it thinly into a rectangular or desired shape. Pan-fry until golden brown on both sides, being careful to adjust the heat so the batter doesn’t burn. After cooking the batter, use the remaining oil in the pan or wipe it clean, and toast the bread slices until golden brown on both sides for extra flavor.
Step 4
Place a slice of processed cheese on top of the well-cooked vegetable pancake, followed by the thinly sliced tomato. Drizzle with ketchup and mayonnaise according to your preference.
