This salad combines the crispiness of lotus root with the freshness of broccoli, all coated in a delightful, nutty black sesame dressing. Main Ingredients- Lotus root 170g

Cooking Instructions
Step 1
First, wash the lotus root thoroughly. Then, use a peeler to carefully remove the skin.

Lotus root tends to brown quickly once cut. To prevent this, soak the peeled lotus root in cold water with a little vinegar immediately after cutting.

Slice the lotus root into very thin matchsticks. If using a knife is challenging, a mandoline slicer will help you achieve thin, uniform slices quickly. The browning can start while slicing, so work efficiently and keep the slices submerged in the vinegar water.

Bring a pot of water to a boil and add 1 Tbsp of coarse salt and 1 Tbsp of vinegar. Add the julienned lotus root and blanch for a very short time (about 10-20 seconds) to maintain its crispness. Be careful not to overcook it.

Immediately rinse the blanched lotus root under cold running water to cool it down. Drain it thoroughly in a colander, pressing out as much water as possible. This step is crucial to prevent the salad from becoming watery.

Cut the broccoli into small florets. Wash them under running water. Soaking them briefly in water with a little vinegar can help with sanitization.

In another pot, bring water to a boil with 1 Tbsp of coarse salt. Add the broccoli florets and blanch for about 1 minute. The goal is to slightly cook the broccoli while keeping its vibrant green color.
