Main Ingredients

  • 1 pack Oyster mushrooms (approx. 300g)
  • 1/2 Red chili pepper
  • 1/2 Green chili pepper
  • 1/4 Onion (small amount)
  • 1-2 Tbsp Cooking oil (or canola oil)

Seasoning

  • 2 Tbsp Korean soup soy sauce (or 1.5 Tbsp regular soy sauce)
  • 1/2 Tbsp Minced garlic
  • 1 Tbsp Sesame oil
  • 1 Tbsp Toasted sesame seeds
  • Pinch of salt (to taste)

Cooking Instructions

Step 1

First, prepare the vegetables. Thinly slice the onion. Remove the seeds from the red and green chili peppers and slice them diagonally. If you enjoy a spicier taste, feel free to increase the amount of green chili pepper.

Step 1

Step 2

Rinse the oyster mushrooms under running water. Trim off any tough stem ends. For thicker stems, cut them in half or tear them into bite-sized pieces. Bring a pot of water to a boil, add 1 teaspoon of salt, and blanch the oyster mushrooms for about 1-2 minutes. Be careful not to overcook them, as they can become mushy.

Step 2

Step 3

Immediately after blanching, rinse the oyster mushrooms in cold water to cool them down. Gently squeeze out excess water by hand. Thoroughly draining the mushrooms is crucial to prevent excess liquid during stir-frying and ensures the seasoning adheres well.

Step 3

Step 4

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced onions and diagonally sliced red and green chili peppers. Stir-fry until the onions become translucent and fragrant.

Step 4

Step 5

Once the onions are softened, add the drained oyster mushrooms. Increase the heat to high and stir-fry briskly, ensuring all ingredients are well combined. The key is to quickly stir-fry to evaporate the mushrooms’ moisture and meld the flavors.

Step 5

Step 6

Now it’s time for the flavor! Add 2 tablespoons of Korean soup soy sauce and stir-fry until the seasoning coats all the ingredients. Using Korean soup soy sauce helps to enhance the subtle flavor of the mushrooms.

Step 6

Step 7

Next, add 1/2 tablespoon of minced garlic. Continue to stir-fry over high heat, stirring constantly to prevent burning, allowing the garlic’s aroma to infuse the dish with umami.

Step 7

Step 8

Reduce the heat to low. Drizzle in 1 tablespoon of sesame oil for a nutty finish. Adding sesame oil at the end preserves its fragrant aroma.

Step 8

Step 9

Finally, generously sprinkle 1 tablespoon of toasted sesame seeds. Give it one last quick stir to ensure everything is evenly mixed. Taste and add a tiny pinch of salt if needed to adjust the seasoning. Your dish is ready!

Step 9

Step 10

Let the finished oyster mushroom stir-fry cool slightly. Store it in an airtight container in the refrigerator. Serve yourself a portion and enjoy this delicious and healthy side dish that stays tasty for several days!
