Pasta Ingredients- 1 serving pasta
- 100g pork bulgogi cut
- 1/2 shiitake mushroom
- 1/2 garlic clove
- 2 pieces green bell pepper
- 1 cup pea water (approx. 200ml)
Seasoning & Additional Ingredients- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- Pinch of sesame seeds
- 1 Tbsp soy sauce

Cooking Instructions
Step 1
First, to prepare the essential pea water for your pea pasta, soak 40g of dried peas in water for about 30 minutes until well-plumped. (Alternatively, you can use pre-soaked peas.)
Step 2
Add 1 cup (approx. 200ml) of water to the soaked peas and blend them in a mixer until very smooth. It’s crucial to blend them thoroughly until there are no lumps and the mixture is creamy.
Step 3
Strain the finely blended pea mixture through a fine-mesh sieve or cheesecloth. Collect only the clear, smooth pea water. Discard the pulp.
Step 4
Transfer the prepared pea water into a sealable container and refrigerate it temporarily.
Step 5
Now, it’s time to cook the pasta. In a large pot of boiling water, add 1 serving of pasta (approx. 80-100g) and cook for exactly 7 minutes, checking the package instructions. Aim for an ‘al dente’ texture.
Step 6
While the pasta is cooking, in a separate pot, add the cooked pasta and pour in the pea water. Cook together, stirring gently to ensure the pasta absorbs the flavors and liquid evenly. (This method involves cooking the pasta directly in the pea water, rather than sautéing it with sauce afterwards.)
Step 7
Carefully lift the cooked pasta out of the pot using tongs or a ladle and place it attractively in your serving dish or bowl. Lightly drain off excess water, but don’t make it completely dry.
Step 8
Before cooking the pasta, prepare the pork. In a bowl, combine 100g of pork bulgogi cut with a pinch of ginger powder, a pinch of black pepper, 1 Tbsp of cooking wine (or mirin), and a pinch of herb salt. Gently mix and knead to marinate. This step helps to remove any pork odor and enhance its flavor.
Step 9
Let the marinated pork rest for about 10 minutes. Meanwhile, thinly slice the garlic cloves and finely julienne the soaked shiitake mushrooms and green bell peppers. Feel free to adjust the type and quantity of vegetables according to your preference.

Preheat a pan with a little cooking oil. Add the marinated pork and stir-fry over high heat until it’s lightly browned. Break up any clumps and cook until the surface is golden.
Step 11
When the pork is almost cooked, add the sliced garlic and sauté until fragrant. Be mindful of the heat to prevent the garlic from burning.
Step 12
Next, add the julienned shiitake mushrooms and green bell peppers to the pan. Stir-fry quickly over high heat until the vegetables are tender-crisp. Avoid overcooking, as they can become mushy.
Step 13
Arrange the cooked pasta on a plate or in a bowl. Top generously with the stir-fried pork and vegetables. Drizzle with 1 Tbsp soy sauce and 1 Tbsp sesame oil. Gently toss everything together until well combined. Adjust the soy sauce amount to your taste.
Step 14
Finally, pour about 1 cup of the prepared pea water over the pasta. (You can adjust the amount of pea water to achieve your desired consistency.) Sprinkle with sesame seeds for a beautiful presentation and delicious nutty flavor. Enjoy your homemade pea pasta!
