Spinach is a beloved vegetable year-round! Today, I’ve prepared the simplest and quickest recipe for spinach salad (Sigeumchi Namul). On hot days, cooking for too long can be daunting, but with this recipe, you can whip it up in no time. Enjoy the abundant nutrients and fresh taste of spinach to the fullest!
Main Ingredients
- 1 bunch Spinach (approx. 300g)
Seasoning
- 1/2 Tbsp Fish Sauce or Soy Sauce (use what you prefer, such as anchovy sauce)
- 1 Tbsp Minced Garlic
- Pinch of Salt (adjust to taste)
- 1 Tbsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
- 1/2 Tbsp Coarse Salt (for blanching spinach)
- 1/2 Tbsp Fish Sauce or Soy Sauce (use what you prefer, such as anchovy sauce)

Cooking Instructions
Step 1
1. Prepare and Wash Spinach Thoroughly: Fill a large bowl with enough water to submerge the spinach and let it soak for 5-10 minutes. This will help any dirt settle at the bottom. Rinse the spinach 2-3 times under running water, gently agitating it. Drain the water well using a colander. Trim the spinach, keeping the roots intact if possible. Scrape off any stubborn dirt from the root ends with a knife. If the stems are thick, cut them in half lengthwise. Avoid trimming too much of the root as it’s nutritious.

2. Blanch the Spinach Perfectly: In a deep pot or wok, bring plenty of water to a rolling boil over high heat. Once boiling, add 1/2 Tbsp of coarse salt and stir. Add the trimmed spinach, starting with the leafy ends. Gently stir the spinach for about 30 seconds until it wilts. Be careful not to over-blanch, as it will become mushy! Immediately remove the spinach from the boiling water and rinse it under cold running water to stop the cooking process. Squeeze out excess water gently; the spinach should still feel slightly moist.

3. Season the Spinach: Once lightly squeezed, cut the spinach into 2-3 bite-sized pieces. Gently loosen any clumps of spinach with your hands to ensure the seasoning will distribute evenly. Now, it’s time to mix in all the prepared seasonings.
