This sandwich is packed with sautéed spinach, offering a delightful combination of nutrition, flavor, and color. Spinach is known for its rich dietary fiber, which aids in preventing constipation, while its beta-carotene is excellent for eye health, and its antioxidants help combat aging. (However, due to its potassium content, moderation is key!) If you usually enjoy spinach as a seasoned side dish or in soup, try sautéing it lightly and adding it to your sandwich – it’s a surprisingly great match! The gently sautéed spinach offers a soft texture and mild flavor that elevates the sandwich. Complemented by a perfectly cooked sunny-side-up egg, creamy cheese, and zesty whole grain mustard, this spinach sandwich is as beautiful as it is healthy and delicious. Shall we get started?

Ingredients

  • 2 slices of bread
  • 1 handful of spinach (approx. 50g)
  • 1/2 tomato
  • 1 slice of cheddar cheese
  • 1 slice of ham
  • 1 egg
  • 1 Tbsp cream cheese
  • 1 Tbsp whole grain mustard
  • A little olive oil
  • 2 pinches of salt
  • 1 pinch of black pepper

Cooking Instructions

Wash one handful of fresh spinach thoroughly and chop it into bite-sized pieces, about 2-3 cm long. Cutting them not too long will make them easier to eat in the sandwich.

Heat a pan with a little olive oil, then add the chopped spinach. Sprinkle in 2 pinches of salt and 1 pinch of pepper. Sauté over medium-low heat until the spinach wilts. If it takes a while for the spinach to soften, covering the pan for 2-3 minutes will speed up the cooking process. Set the sautéed spinach aside to cool slightly.

Wash 1/2 tomato and slice it into about 0.5 cm thick rounds. These will be used as a layer inside the sandwich.

Now it’s time to cook the ham. I used thinly sliced ham and fried it until lightly golden. I fried four slices, but only used three for the sandwich – the extra one became a tasty snack while I was preparing everything! (Optional: you can use two slices of ham for a richer flavor.)

Let’s make a fried egg. You can adjust the doneness of the yolk to your preference. Cooking it to a soft yolk will allow it to run out when you take a bite, acting as a natural sauce. If you prefer a fully cooked yolk, fry it until firm. Alternatively, you could make scrambled eggs or an egg pancake with vegetables for a different twist.

To make assembly neat, line your cutting board with plastic wrap. This way, you can wrap the sandwich directly in the plastic wrap after assembling it, maintaining its shape.

Prepare your two slices of bread. Spread 1 tablespoon of cream cheese on one slice and 1 tablespoon of whole grain mustard on the other. Feel free to use your favorite spreads here if you prefer something different!

On the slice of bread with whole grain mustard, layer the fried ham. Then, add the sautéed spinach, tomato slices, fried egg, and finally, one slice of cheddar cheese.

Top with the other slice of bread (cream cheese side down) to complete the sandwich. Wrap the entire sandwich tightly with the plastic wrap you prepared earlier. This helps keep everything together.
