Main Ingredients- 2 new potatoes
- 1 onion
- 1-2 Tbsp cooking oil
- 1/3 tsp salt
- Pinch of black pepper
- 1-2 Tbsp dried shrimp (bob-saeu)
Cooking Instructions
Step 1
Wash the 2 new potatoes thoroughly under running water to remove any dirt or debris. Peel the skin using a peeler. You can also cook them with the skin on for a rustic feel, but peeling is recommended for a cleaner texture.

After peeling, thinly slice the potatoes into matchsticks, about 0.3 cm thick. If they are too thick, they will take a long time to cook and won’t have the best texture. If they are too thin, they might break apart easily. Aim for a consistent thickness for even cooking.

Place the julienned potatoes in a bowl of cold water and let them soak for at least 10 minutes to remove excess starch. This step prevents the potato strips from sticking together and helps achieve a fluffy texture when stir-fried. After soaking, drain them thoroughly in a colander.

Peel and wash the onion. Then, slice it into strips similar in length to the potato matchsticks. Slicing it vertically will make it blend well with the potatoes and cook at a similar rate.

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add all the julienned potatoes to the pan. Starting on medium heat helps prevent the potatoes from burning.

As you stir-fry the potatoes, add 1/3 teaspoon of salt. Adding salt early helps draw out moisture from the potatoes, allowing them to cook faster and enhancing their flavor.
