Main Ingredients

  • 1/2 block Firm Tofu
  • 1 pack Enoki Mushrooms
  • 1/3 Onion
  • 1/4 Zucchini
  • 1/4 Green Onion
  • A little Cheongyang Pepper (optional)
  • 1 Tbsp Minced Garlic
  • 200ml Water
  • 2 Tbsp Perilla Oil
  • 1 Tbsp Cooking Oil

Seasoning Paste

  • 2 Tbsp Doenjang (Soybean Paste) (2 heaping tablespoons)
  • 1/2 Tbsp Gochujang (Red Pepper Paste)
  • 1 Tbsp Gochugaru (Red Pepper Flakes)
  • 1 Tbsp Maesilcheong (Plum Syrup)
  • 1 Tbsp Mirin (Cooking Wine)
  • 1 Tbsp Perilla Seed Powder

Cooking Instructions

Step 1

Add a bit of Cheongyang pepper for a touch of spice. You can omit this if you don’t like spicy food. Feel free to substitute vegetables with others like potatoes or shiitake mushrooms according to your preference.

Wash the onion and zucchini, then finely dice them into small cubes, about 0.5cm in size.

Cut the green onion in half lengthwise and chop it finely. If using Cheongyang pepper, remove the seeds and mince it.

Trim the base of the enoki mushrooms and cut them into pieces about the length of a finger joint.

Use a fork to mash the tofu until it’s smooth and lump-free. This will add a creamy texture to the Doenjang stew.

In a small bowl, combine the doenjang, gochujang, gochugaru, maesilcheong, mirin, and perilla seed powder. Mix well to create the seasoning paste.

Heat a pan over medium heat and add the perilla oil and cooking oil. Sauté the chopped onion, green onion, and minced garlic until fragrant.
