How to Cook Delicious Abalone Seaweed Soup

Main Ingredients- 2 Abalones
- 10g Dried Seaweed
- 1 Tbsp Minced Garlic

Cooking Instructions
Step 1
First, soak the 10g of dried seaweed in cold water for about 10-15 minutes until fully rehydrated. Gently squeeze out excess water, then cut the seaweed into bite-sized pieces, approximately 3-4 cm long, for easier eating.
Step 2
Prepare 2 fresh abalones. Separate the abalone meat from the shell. Remove the tough ‘beak’ and the dark internal organs. (Keeping the organs adds a richer, more savory flavor to the soup; you can omit them if you prefer.) Slice the abalone meat into about 0.5 cm thick pieces.
Step 3
In a pot, add a little sesame oil and sauté the prepared seaweed and 1 tablespoon of minced garlic over medium-low heat. Stir-fry for about 2-3 minutes until the seaweed softens and becomes fragrant. Be careful not to burn the seaweed while stir-frying.
Step 4
Once the seaweed is softened, add the removed abalone internal organs (if using). Break them up with a chopstick while stir-frying to ensure they are evenly cooked and to release their savory flavor. Continue to stir-fry for about 1-2 more minutes.
Step 5
After sautéing the ingredients, pour in 500-700ml of water or rice water and bring to a boil over high heat. Once boiling, reduce the heat to low, cover partially, and simmer gently for at least 15 minutes. The longer it simmers, the deeper the flavors of the seaweed and abalone will infuse into the broth, making it more delicious.
Step 6
Finally, season the soup with soy sauce for soup (Guk-ganjang) to taste. You can add salt if needed. After seasoning, add the sliced abalone and simmer for another brief moment, about 1-2 minutes, until just cooked through. Overcooking can make the abalone tough, so a quick simmer is best for a tender result. Your delicious Abalone Seaweed Soup is ready!
