Nutritious Abalone Porridge with Chewy Abalone
Abalone Porridge Recipe: A Deep and Rich Flavor Made with Abalone, the ‘Treasure of the Sea’
This is a highly nutritious abalone porridge made with generous amounts of fresh, live abalone, a precious ingredient from the sea. Its soft texture and deep oceanic flavor combine to create a filling and healthy meal option for any occasion. It’s the perfect choice when you need to boost your energy or desire a comforting, easy-to-digest meal.
Main Ingredients- 6 live abalones (medium size, approx. 300g)
- 1/2 cup glutinous rice (approx. 50g)
- 1/2 cup regular rice (approx. 50g)
- 10 cups water (2,000ml)
Cooking Instructions
Step 1
First, thoroughly wash the fresh live abalones using a brush to scrub the edges and the top of the shells under running water. Rinse them clean to remove any grit or impurities.
Step 2
Gently insert the back of a spoon between the abalone shell and the meat. Use leverage to carefully pry the abalone meat away from the shell. Be sure to detach the adductor muscle as well.
Step 3
Separate the innards from the meat, carefully. Trim off the hard mouthparts (the ‘beak’) from the abalone meat using a knife. Slice the abalone meat into bite-sized pieces, about 0.5cm thick, following its natural shape. (The innards can also be used for a richer, more savory flavor; clean them thoroughly and include them in the porridge if desired.)
Step 4
Rinse the glutinous rice and regular rice, then soak them in water for about 30 minutes. Drain them well in a sieve. Heat 1 tablespoon of sesame oil in a pot over medium-low heat. Add the soaked rice, abalone meat, and innards. Stir-fry for about 2-3 minutes until the rice grains become translucent and the abalone is lightly cooked. Stir-frying coats the rice grains in oil, which helps prevent the porridge from becoming mushy.
Step 5
Pour 10 cups of water into the pot with the stir-fried rice and abalone. Bring to a boil over high heat, then reduce the heat to medium-low. Cook uncovered, stirring occasionally, until the rice grains are fully broken down and the porridge has thickened, about 20-30 minutes. Finally, season with soy sauce or salt to taste. Seasoning it lightly allows the natural flavor of the abalone to shine through.
