This is my take on the abalone rice recipe featured on the show ‘Sumine Banchan’, which I’ve been diligently following. I purchased fresh abalone from the market and cooked this nutritious rice to my liking. While I usually only enjoy abalone porridge, I was curious about this dish and craved it! Sumine Banchan uses tiger beans and chestnuts, but I opted to include only ingredients I love. Since I don’t have a traditional rice pot, I used my trusty pressure cooker, adapting the recipe slightly. The result? A huge success and incredibly delicious! Nutritious Abalone Rice Ingredients- 4 cups soaked rice
- 3 fresh abalones
- 2 and 4/5 cups water (approx. 560ml)
- 2 Tbsp cooking wine (like Mirin)
- 1 Tbsp sesame oil
- A little rice water (if needed)
- 1 cup soju (for removing fishy smell from abalone)
Savory Chive Sauce- 1 bunch fresh chives
- 1 Cheongyang chili pepper (adjust spice level)
- 1/2 red chili pepper (for color)
- 4 Tbsp soy sauce
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
- 1 bunch fresh chives

Cooking Instructions
Step 1
First, it’s important to remove any fishy odor from the abalone. Scrub the abalone shell clean with a brush, then use a spoon to gently separate the meat from the shell. Remove the ‘beak’ or mouthpart and set the innards aside. Soak the separated abalone in 1 cup of soju for about 10 minutes to effectively eliminate any unpleasant smell. (Alternatively, you can briefly blanch it in boiling water.)
Step 2
Wash the rice thoroughly and let it soak for at least 30 minutes. Soaking the rice helps achieve a fluffy and delicious texture.
Step 3
Drain the soaked rice. Finely mince the reserved abalone innards. Slice the abalone meat into bite-sized pieces. Scoring the abalone meat with a knife creates a more tender texture and allows it to absorb flavors better.
Step 4
In a pressure cooker, combine the soaked rice, minced abalone innards, cooking wine, and sesame oil. Stir-fry over medium-low heat for 1-2 minutes. The rice is ready when the grains start to turn translucent, ensuring a good texture.
Step 5
Once the rice is slightly stir-fried, pour in the prepared water (2 and 4/5 cups) and mix well. Arrange the scored abalone meat attractively on top. Close the pressure cooker lid, bring to high heat until the weight starts to whistle, then reduce to medium-low heat and cook for 7-10 minutes. (Adjust cooking time based on your pressure cooker model.)
Step 6
While the rice is cooking, let’s make the delicious chive sauce! Finely chop the fresh chives. Mince the Cheongyang and red chili peppers. In a bowl, combine the soy sauce, sesame oil, toasted sesame seeds, chopped chives, and chili peppers, and mix well. Your fragrant chive sauce is ready!
Step 7
Once the rice is cooked, carefully open the pressure cooker lid. Gently mix the rice with the abalone meat. Serve the warm abalone rice with a generous dollop of the savory chive sauce – it’s absolutely delicious! You can also sprinkle some roasted seaweed flakes on top for extra flavor.
