Main Ingredients

  • 2 bowls of warm cooked rice (approx. 400g)
  • 60g fresh cod fillet
  • 15g small dried anchovies
  • 15g rehydrated seaweed
  • 1 Tbsp sesame oil
  • 2 Tbsp soy sauce

Cooking Instructions

Soak the dried seaweed in cold water for at least 30 minutes until fully rehydrated. Rinse the soaked seaweed thoroughly under running water, squeeze out any excess moisture, and finely chop it into bite-sized pieces (about 1cm). Be careful not to over-soak, as it can become mushy.

Place the small dried anchovies in a dry, unheated pan. Stir-fry over low heat for 2-3 minutes to remove any fishy odors and enhance their savory flavor. Transfer the toasted anchovies to a separate bowl for later.

In the same pan, add the prepared cod fillet and stir-fry over medium heat until it turns opaque and is cooked through. (Tip: Although the recipe suggests adding sesame oil later, stir-frying the cod with a little sesame oil at this stage adds a richer, nuttier flavor. Feel free to adjust to your preference.)

Add the finely chopped rehydrated seaweed to the pan with the cod. Continue to stir-fry for another 1-2 minutes until the seaweed softens. Drizzle in 1 tablespoon of sesame oil for a fragrant aroma.

Pour in 2 tablespoons of soy sauce and mix well with the other ingredients. Stir-fry for about 1 minute to allow the soy sauce to evenly coat everything, enhancing the umami flavor.

Finally, add the 2 bowls of warm cooked rice to the pan. Gently mix and stir-fry using a spatula, being careful not to mash the ingredients or rice.
