Easy and Flavorful Curry Rice Bowl Recipe
Curry, originating from India, is not just a delicious spice blend but also a powerhouse of health benefits. Main Ingredients- Curry powder (store-bought) 100g
- Potatoes 2 medium
- Onion 1 medium
- Zucchini 1/2
- Spam 200g (or your favorite ham)
Cooking Instructions
Step 1
First, prepare the curry powder. In about 1/2 cup of water, dissolve 100g of curry powder, stirring well to ensure there are no lumps. Dissolving it beforehand helps prevent clumping when you add it to the pot.
Step 2
Peel the potatoes and wash them thoroughly. Cut them into bite-sized cubes, about 2cm square. Since potatoes take a bit longer to cook, cutting them into uniform sizes is helpful.
Step 3
Peel the onion and wash it under running water. Dice it into 2cm cubes, similar in size to the potatoes. As the onion cooks, its sweetness will be released, enhancing the curry’s flavor.
Step 4
Wash the zucchini well and cut it into 2cm cubes, similar in size to the potatoes and onions. Be careful not to cut them too small, or they might become mushy.
Step 5
Remove the packaging from the Spam and dice it into 2cm cubes, the same size as the vegetables. You can substitute Spam with other ham, pork, or chicken for a different flavor.
Step 6
Heat a little cooking oil in a large pot or pan. Add all the diced vegetables (potatoes, onion, zucchini) and Spam. Sauté over medium heat for about 5-7 minutes, stirring occasionally, until the vegetables start to soften and the Spam is lightly browned. Sautéing the ingredients beforehand deepens the flavor considerably.
Step 7
Once the vegetables and Spam are sufficiently sautéed, pour in 600ml of water. Bring it to a boil over high heat, then reduce the heat to medium-low. Let it simmer for about 5-7 minutes, or until the potatoes are almost tender.
Step 8
When the potatoes are nearly cooked, gradually pour the dissolved curry powder mixture into the pot while stirring continuously. After adding the curry, it’s prone to sticking to the bottom, so reduce the heat to low. Continue stirring and cook for another 2-3 minutes until the curry thickens to your desired consistency. Your delicious curry rice bowl is ready!
