Nutritious and Delicious Grain Gangjeong: A Perfect Breakfast Alternative
Homemade Gangjeong Recipe Using Roasted Grains
Introducing a highly nutritious Gangjeong that can serve as a satisfying breakfast alternative. Just a couple of pieces provide ample energy and nutrients to keep you going.
Main Ingredients- 4 cups roasted brown rice
- 3 cups roasted glutinous brown rice
- 2 cups roasted black rice
- 2 cups roasted soybeans (jeonokkong variety)
- 1 cup roasted whole wheat
- 2 cups homemade Jocheong (rice syrup)
Cooking Instructions
Step 1
Prepare the grains by cooking them in a pressure cooker until they are fluffy and separate, then dry them thoroughly and roast them. (Alternatively, you can use store-bought multi-grain flakes for convenience.)
Step 2
Prepare the Jocheong (rice syrup) for making the Gangjeong. While using sugar or corn syrup can make the process easier, we’re using only homemade Jocheong for family health. Pour the Jocheong into a pan and bring it to a boil. Once boiling, reduce the heat to low and simmer for 5 to 10 minutes. The simmering time may vary depending on the Jocheong’s consistency; continue simmering until it thickens to a syrupy consistency.
Step 3
Add all the prepared roasted grains to the simmering Jocheong. Mix thoroughly with a spatula, ensuring each grain is evenly coated with the syrup.
Step 4
Line a square pan or baking sheet with parchment paper. Pour the mixture of Jocheong-coated grains into the pan. Use a spatula to spread it evenly across the entire surface.
Step 5
Place another sheet of parchment paper on top of the grain mixture. Press down firmly with your hands or a rolling pin to compact the grains and help them stick together. Then, use a rolling pin or a similar tool to flatten the surface smoothly, creating an even layer.
Step 6
Once the Gangjeong has completely cooled, cut it into bite-sized pieces (squares or your preferred shape). You’ll have a wonderfully nutty and nutritious multi-grain Gangjeong, bursting with flavor!
Step 7
Individually wrap the finished Gangjeong pieces in small bags. This makes them easy to grab and enjoy one at a time, and they also make for delightful homemade gifts.
