- 4 sticks imitation crab meat
- 4 large eggs
- 1/4 medium zucchini (about 100g)
- 1/2 small tomato
- 1/4 white part of a leek

Step 1
First, prepare 4 large fresh eggs. Crack them into a bowl and whisk gently with a whisk, ensuring you break down the chalazae (the white, cord-like strands) for a smoother batter. Avoid over-whisking to prevent too much foam.
Step 2
Unwrap the imitation crab sticks. Tear them lengthwise by hand, then chop them into small pieces, about 1-2 cm in length. This ensures they distribute evenly throughout the batter and add a delightful texture and flavor to the pancakes.
Step 3
Wash the zucchini thoroughly. Slice it into approximately 4cm lengths, avoiding the seedy core. Then, finely mince the zucchini. Uniformly minced zucchini will cook evenly, so try to cut them to a consistent size.

Remove the stem from the tomato and mince it finely, similar to how you prepared the zucchini. The natural moisture from the tomato will add a wonderful depth of flavor to the pancakes.

Finely chop the leek. Using the white parts primarily will add a more fragrant aroma. Before combining all the ingredients, add 1 teaspoon of salt to the whisked eggs and mix well to season the batter.

Take about half of the chopped imitation crab meat and add it to the seasoned egg mixture. Stir well to combine. This way, you’ll have plenty of imitation crab inside the pancakes, enhancing both texture and taste.

Now it’s time to cook the pancakes. Heat a non-stick skillet over medium heat and add a generous amount of cooking oil. Ladle about two spoonfuls of the batter onto the hot pan, forming round pancakes. Try to make them relatively thin for extra crispiness.

Once the bottom of the pancake starts to turn golden brown, carefully take the remaining imitation crab meat and sprinkle it over the top. Then, gently pour a little more of the egg mixture over the crab meat. Reduce the heat to medium-low and cook until the center is fully cooked through.
