Main Ingredients- 300g Smoked Duck
- 1 medium Onion
- 1 Bell Pepper (any color)
- 1/2 large Green Onion
- 6 Button Mushrooms
- A sufficient amount of Perilla Leaves
- 1 tsp Minced Garlic
Seasoning- 1 Tbsp Oyster Sauce
- 1 Tbsp Cooking Wine (e.g., Mirin)
- 1/2 Tbsp Oligosaccharide (or Corn Syrup)
- 1 Tbsp Oyster Sauce
- 1 Tbsp Cooking Wine (e.g., Mirin)
- 1/2 Tbsp Oligosaccharide (or Corn Syrup)
Cooking Instructions
Step 1
Place the smoked duck on a sieve and pour hot water over it. This step helps to drain away excess fat, resulting in a cleaner and more tender taste.
Step 2
Finely mince the green onion. This will infuse the duck with its aromatic flavor and will be used to create fragrant green onion oil.
Step 3
Peel the onion and cut it into approximately 2cm square pieces. It’s important to maintain a pleasant crispness in the vegetables.
Step 4
Cut the bell pepper into similar sized squares, about 2cm, to match the onion. The vibrant color will add visual appeal to the dish.
Step 5
Clean the button mushrooms, remove the stems, and slice them into quarters. Avoid slicing them too thinly, as they can become mushy when cooked.
Step 6
Wash the perilla leaves thoroughly, pat them dry, then roll them up and julienne them. They will be added at the end to impart a fresh, herbaceous aroma.
Step 7
Cut the smoked duck, after draining the excess fat, into bite-sized pieces. Slices around 3-4cm in length are usually ideal for a good bite.
Step 8
Heat a medium-sized pan over medium heat, add a little cooking oil, and sauté the minced green onion until fragrant, creating green onion oil. This fragrant oil will elevate the dish’s overall flavor profile.
Step 9
Once the green onion oil is aromatic, add the sliced onion and stir-fry over medium heat until the onion becomes translucent and its sweetness starts to release. Sauté them thoroughly.
Step 10
When the onion is somewhat cooked and translucent, add the sliced bell pepper and button mushrooms. Stir-fry together for about 1-2 minutes to retain the vegetables’ crisp texture.
Step 11
Now, add the prepared smoked duck to the pan and stir-fry to combine. Once the duck is lightly cooked, add the oyster sauce, cooking wine, and oligosaccharide. Increase the heat to high and stir-fry quickly to ensure the sauce evenly coats all the ingredients. Be careful not to overcook, as the duck can become tough.
Step 12
Finally, add the julienned perilla leaves and toss gently just once to combine. This ensures their fresh aroma remains intact. Your delicious stir-fried duck with vegetables is now ready!
