Cooking Instructions
Step 1
Prepare all the ingredients for a delicious stir-fried eggplant with beef. Wash the eggplants and pat them dry. Prepare the bell pepper and scallion as well.
Step 2
Before stir-frying, it’s important to remove the blood from the beef. Use paper towels to gently press and absorb any moisture from the surface of the meat. This helps reduce any gamey flavors and results in a cleaner taste.
Step 3
Add all the ‘Beef Marinade’ ingredients to the blood-removed beef. Gently mix and marinate for about 10 minutes, allowing the flavors to meld.
Step 4
Wash the eggplants thoroughly, then slice them diagonally about 0.7cm thick. Slicing them like eyebrows gives them a nice shape after cooking. (Tip: Slice according to the length of the eggplant.)
Step 5
Heat a pan over medium heat and add a generous amount of cooking oil. Add the sliced eggplants and stir-fry just until they soften slightly and become tender. Be careful not to overcook, as they can become mushy.
Step 6
Slice the scallion diagonally and chop it finely. Cut the red bell pepper into thick julienne strips. This will add a beautiful color and make the dish more appealing.
Step 7
Now, let’s start stir-frying. Reheat the pan with a little cooking oil. Add the marinated beef and break it apart with chopsticks as you stir-fry, ensuring it’s cooked through and no pink remains.
Step 8
Once the beef is no longer pink, add the stir-fried eggplant to the pan. Gently mix everything together as you continue to cook.
Step 9
When the eggplant and beef are somewhat combined, add all the ‘Overall Seasoning’ ingredients. Stir-fry quickly over high heat for 1-2 minutes to prevent the sauce from burning.
Step 10
Finally, add the julienned bell pepper and chopped scallions. Stir-fry briefly. Taste and adjust seasoning with a little salt if needed.
Step 11
Turn off the heat. Drizzle with sesame oil and sprinkle with sesame seeds for a glossy finish and enhanced aroma. Give it a final mix, and your delicious stir-fried eggplant with beef is ready! Enjoy it with a warm bowl of rice.
