- 1 piece Dried Seaweed (approx. 10cm x 10cm)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce (Gukganjang)
- 1 Tbsp Tuna Extract (or 1 Tbsp Soy Sauce)
- 1 Tbsp Sesame Oil
- Pinch of Black Pepper
- 1 cup Dashi Broth (approx. 200ml)
Dashi Broth Ingredients- 1 Anchovy Dashi Pack
- 1 piece Dried Seaweed (approx. 10cm x 10cm)
Cooking Instructions
Step 1
First, slice the tofu into 1cm thick pieces for easy eating. Finely chop the green and red chilies, and also finely chop the scallion. Slice the onion into thin strips. For the canned tuna, it’s best to use it without draining the oil to maximize the rich flavor.
Step 2
Now, line the bottom of your stew pot with half of the sliced onions. Arrange the prepared tofu and the undrained tuna on top in an appealing manner.
Step 3
After placing the tofu and tuna, sprinkle the chopped green chilies, red chilies, and scallions evenly over the top. Then, evenly sprinkle the gochugaru and soy sauce over the ingredients so the seasoning coats everything.
Step 4
Adding tuna extract along with soy sauce enhances the umami flavor and prevents the soy sauce from being too overpowering. If you don’t have tuna extract, you can substitute it with soy sauce or soup soy sauce, but be sure to adjust the quantity accordingly.
Step 5
Pour in 1 cup of the dashi broth made with the broth ingredients and bring to a simmer over medium heat. Once the broth is bubbling gently, reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to meld into the ingredients. Just before turning off the heat, stir in 1 tablespoon of sesame oil and a pinch of black pepper to add aroma, then finish the dish.
Step 6
The tender tofu and savory tuna combined with the delicious seasoning create a perfect Tuna Tofu Stew, an excellent side dish for any meal. Enjoy this hearty and flavorful dinner!
Step 7
Tofu dishes are universally loved and never get boring! Tofu is packed with plant-based protein, an essential nutrient for our bodies, so it’s great to make an effort to eat more of it for good health.
Step 8
This recipe is versatile; you can substitute the tuna with mushrooms or pork for a different, equally delicious variation. Changing the main ingredient can transform it into a satisfying main course that doesn’t require many other side dishes. I personally like to make it not too salty, so I end up eating more tofu than rice – it’s my favorite kind of side dish!
