- Sugar 7 Tbsp (adjust to taste)
- Soy sauce 6 Tbsp
- Cinnamon powder 1/2 Tbsp
Cooking Instructions
Step 1
First, prepare 2 measuring cups of sweet glutinous rice. Rinse the rice thoroughly, drain it in a colander, and soak it for at least 20 minutes. This ensures the rice grains become wonderfully chewy and delicious.
Step 2
Let’s make the seasoning sauce that determines the flavor of your Yakshik! In a bowl, combine 2 measuring cups (approx. 360ml) of water, 7 Tbsp of sugar, 6 Tbsp of soy sauce, and 1/2 Tbsp of cinnamon powder for a fragrant aroma. Stir everything well. Feel free to adjust the amount of sugar to your preference.
Step 3
Place the soaked glutinous rice into the inner pot of your rice cooker. It’s important to spread the rice evenly so that the seasoning can be absorbed well throughout the grains.
Step 4
Pour the prepared seasoning sauce over the rice in the rice cooker. Then, add all the prepped ingredients: the chestnuts, pine nuts, walnuts, and raisins. Mix everything together gently. Now, select the ‘White Rice’ or ‘Quick Cook’ setting on your rice cooker and start cooking.
Step 5
(Optional Garnish) While the rice is cooking, preparing a beautiful garnish will make your Yakshik extra special. Slice the jujubes in half, remove the seeds, then roll them up and slice thinly. This creates lovely flower-shaped garnishes.
Step 6
Once the rice is perfectly cooked, open the rice cooker. While it’s still warm, drizzle about 2-3 tablespoons of sesame oil over the rice. Using a spatula, gently fold and mix the rice so as not to mash the grains, ensuring the seasoning is evenly distributed. A glossy sheen on the rice grains makes it look even more appetizing.
Step 7
(Optional Serving) Enjoy your Yakshik in your preferred shape! You can press the warm Yakshik firmly into a rectangular lunchbox or a mold, let it cool slightly, and then cut it into neat portions. Alternatively, you can roll it into bite-sized balls for a convenient snack.
